1420711999072I was given the opportunity recently to make a bunch of tissue paper flowers for a school project.  I had so much fun with it honestly, and thought, these sure would make a beautiful decoration, or they could be used for head garlands (as pictured here) which are pretty popular in Texas, or Homecoming Mums (another Texas thing), or to decorate Derby hats, or for a garden tea party, or luau, or FiEsTa (which happens to be going on in San Antonio at this very moment), which got me to thinking that somebody else out there might appreciate knowing how to make these.  I also sure don’t want to ever forget how I made them, so…  that’s as good a reason as any to blog about something, me thinks.

Materials needed:  1 package of multi-colored tissue paper, a good pair of sissors, a stapler, and string (optional).

A large package of multi-colored tissue paper is fairly inexpensive to buy at the big box stores ($10 for 100 sheets).  And one of those packages will give you more than enough paper to make 100 flowers that are roughly the size of one of those mesh shower pouf thingies.  (If you want to make giant flowers, you could probably squeeze 10 or so out of a package???)

So here is how you make them.  First open the package of tissue paper and separate the colors.  Straighten up the sheets so that they lay exactly on top of each other.  Peel off two sheets of one color of the tissue paper.

Now, I’ve included visual instructions below that will hopefully be easy to follow, but I will also explain…

  1.  Gather your materials.  It will help to have a large table where you can spread out the tissue paper into individual color piles.  (My poor sissors, you’ll notice, have issues, actually just one issue.  I don’t know what happened, but they are Fiskers, and the handles have decomposed over the years since I first bought them.  They are sticky now, and almost clay-like.  The stuff was coming off on my hands and making my hands sticky, so I wrapped the handles in strips of paper towel.  Has this happened to anyone else? Or is it just the humidity in the south that has made mine do this?)
  2. Peel off 5 sheets of tissue paper and stack them together neatly.  Then starting at the bottom fold up about an inch width and press it flat.
  3. Flip the stack over and fold the other direction, and press flat.
  4. Continue folding in an accordion pattern until you reach the other end.
  5. Press the stack flat.
  6. Fold the stack in half to mark the center place.
  7. Press it flat to make a good crease.
  8. Open and place under the stapler, and place a staple on exactly that center crease line. Option: you can also tie a string around this center part so you will have something to tie the flower, to attach it to whatever you are decorating.

  10. Now cut one end with whatever pattern you wish for the type of flower you wish to make (see diagram below)
  11. Cut the first end and discard the scraps
  12. Then cut the second end to match
  13. Fan out the ends to make it easy to separate the individual sheets

14. Fan out both ends

15. Carefully peel off the top sheet and pull it away from the others, up towards the center

16 – 18. Continue separating sheets and pulling them up towards the center on both ends, going around in a circle

19. Smooth out the last sheet to flatten out the bottom

20 – 23. Bring the flower around and fluff each peddle to make them all uniform and fill in any gaps.

24 – 26. Set your flower down and admire how pretty it is.  Then pick another color and continue making flowers.

Tissue Paper Flower instruction4 The center pom kind of makes a flower that looks like a cactus flower.  You can do the same sort of thing with green tissue going out the bottom to look like the bud part of the bloom (just cut it with deep zig zags instead of the fringe).  You can also experiment with various cuts, and you can also layer two colors of tissue together to make more interesting options.  Here are some samples of the flowers I made.  They turned out soooooo pretty?

I love theme dinners!  And Polynesian is one of those themes that has tons to offer… tons of great foods… lots of great music… and a motherlode of great activities.  That’s probably why luau parties are so popular.  They are great for a crowd (family reunions, company picnics, neighborhood get-togethers, graduation parties, youth group events, and so on).

That’s all well and good, but I had in mind something a little more intimate.  In my younger life, I had the idea to have monthly theme dinners just for family – just to make memories for my kids.  January’s theme was Chinese New Year, where we dressed up, ate Chinese foods, listened to Asian music, played some sort of Chinese games after dinner, and totally immersed ourselves in Asian culture for a night.  February was Cajun foods, music, and culture.  March was Irish.  April was Polish or Italian.  May was Mexican or Caribbean.  June was Polynesian or African.  July was American (which encompasses everything from BBQ to Burgers, to Hot Dogs in every variety).  August was South American or Australian.  September was Russian or French. October was German.  November was American Indian.  And December was Indian or Mediterranean.  That was my plan.  It was so much my plan that I wrote a whole book about it, but then I kind of lost my focus.  <Sheepish shrug>   Well, thankfully God has given me grandchildren, and a whole renewed interest in introducing them to the cultures and foods, and sounds, and pastimes of the world.  And the great thing is … SUMMER IS COMING!!!!  Which makes it a great time to introduce the kids to something fun and interesting and chase away those summer doldrums, not to mention it’s all kind of educational as well.

Knickknacks, tanning mats, give a dog a fish bone.  The dollar store is a great place to look for decorations.  You can keep it simple (lay a bamboo tanning mat down on the table, set a tropical plant as a centerpiece, and lay out luau plates, cups, and silverware from the party store), or go hog-wild (outdoor party with mumus and sarongs, tiki lanterns, grass skirts, a limbo stick, kalua pig roasting on a spit, cold drinks in pineapples or coconuts, and a nice array of Makahiki games, Hawaiian crafts, and games).  Gotta have some Island music too (may I suggest Don Ho?), and maybe even get the kids ukuleles, and teach them to play an easy song.

After dinner, you can break out the limbo stick and challenge the kids to a contest, or try some hula hooping.  Then set the TV outside and gather the lawn chairs around for an outdoor movie night.  How about a marathon of old Gilligan’s Island reruns?  Or, for a real submersion into Hawaiian culture, make leis, learn to hula, set your back yard up with some of the Makahiki Games listed below, and watch a mesmerizing “Ha: Breath of Life” show on DVD.

Traditionally, a Hawaiian party would have deep pit roasted Kalua Pig, long rice (which is basically the same thing as Pad Thai rice noodles), some dish of sweet potatoes (purple), and Poi, or even Spam Musubi.  If it is your goal to introduce your family to Hawaiian culture, go with tradition.  I found some wonderful recipes HERE that I plan to try.

COCONUT SHRIMP

Batter:

1 cup all-purpose flour

1 cup dry white wine

   – – – –

1 lb large tail-on shrimp, peeled and deveined, and patted dry on paper towels

1  7-oz pkg shredded coconut

Instructions:  Place peanut oil in deep fryer and set temperature to 375 degrees.  Mix flour with wine until smooth.  When oil has reached temperature, dip about 5 of the shrimp, one at a time in batter and then roll in coconut.  Drop into deep fryer and cook for about 2 to 3 minutes or until golden and curled.  Drain on paper towels.  Continue until all shrimp are cooked.

Melted jalapeno jelly makes a wonderful dipping sauce (remove lid from jar, warm in microwave about 1 min., stir and divide into little sauce cups).  Or see the sauce recipe later down on this page.  Serves 4

SPICY POLYNESIAN WRAPS

Ingredients

2 pounds skinless, boneless chicken breast halves – cut into 1 inch strips

1 (14 ounce) can coconut milk

1 cup uncooked long grain white rice

2 cups water

1 1/2 cups all-purpose flour

1 1/2 Tablespoons curry powder (hot or mild as you wish)

1 tablespoon garlic salt

3/4 cup vegetable oil

2 limes

10 (10-inch, thin) colored flour tortillas wraps

1/2 cup shredded coconut

1/2 cup chopped green onions

2 Serrano chilies, (seeds discarded) minced (optional)

Directions:

  1. Place the chicken and coconut milk in a bowl, and marinate in the refrigerator 1 hour.
  2. In a pot, bring the rice and water to a boil. Cover, reduce heat to low, and simmer 20 minutes.
  3. In a small bowl, mix the flour, curry powder, and garlic salt. Drain the chicken, and discard marinade. Dredge chicken in the flour mixture to coat.
  4. Heat the oil in a skillet over medium heat, and cook the coated chicken strips 5 minutes per side, or until golden brown and juices run clear. Squeeze lime juice over chicken, and discard limes.
  5. On each tortilla, place equal amounts of rice, chicken, coconut, and green onions, and sprinkle desired amount of Serrano chilies. Wrap burrito style.

POLYNESIAN DIPPING SAUCE (for shrimp, or wraps)

Ingredients

13 ounces coconut milk

2 teaspoons green curry paste

1 tablespoon grated gingerroot

1 tablespoon grated lime rind

1 tablespoon granulated sugar

1 tablespoon chopped fresh mint

1 tablespoon chopped fresh cilantro

2 tablespoons lime juice

Directions: 

Place coconut milk in a skillet and bring to boil. Reduce heat to low and simmer for 10 minutes until reduced by a quarter – it should be the consistency of heavy cream. Stir in the green curry paste, ginger, lime rind, and sugar. Cook another 5 to 6 minutes or until sauce is thickened and fragrant. Stir in mint, cilantro, and lime juice. Cool and refrigerate until ready to serve.

SPAM MUSUBI

3 cups cooked Sushi rice

4 sheets Spring Roll Wrappers (this is a MrsH modification: I’m not a fan of Nori)

1  12-oz can Spam

6 Tbsp Soy Sauce

6 Tbsp Hawaiian BBQ sauce

Furikake

I cut the end off of my Spam can with sissors to use to make my Musubi, and I used a wooden meat mallet to press the rice down.  After making my musubi I have decided Nori is just too healthy tasting for my taste, so after making it with Nori, I peeled the Nori off to eat it, and next time I’m going to try making it with rice paper (Spring Roll Wrappers) instead.  I also didn’t care for the Furikake (rice seasoning) because of the seaweed that was in it.  The one I used was Wasabi Fumi Furikake.  It had a good flavor that really does need to be there, but just warning you not to go hog wild with it if you aren’t a seaweed fan.  I do like wasabi and sesame.  And I added chopped green onion. Maybe there is a variety of Furikake without seaweed???

Spam Musubi

Prepare the Rice as per package instructions.  Allow to cool.  Meanwhile, cut the Spam into eight equal slices.  Fry the Spam in a frying pan until very crispy on both sides.  Mix soy sauce with BBQ sauce and pour over Spam.  Stir around and flip until sauce is carmelized onto the Spam.  Remove from heat.

This is the process for making the musubi:  (shown using Nori seaweed)

Musubi procedure

Cut each sheet of Nori in half.  Lay half a sheet down on a clean paper towel.  Place Musubi press (Spam can) in the center.  Add about a heaping tablespoon of rice and press down.  Add a sprinkle of Furikake.  Place a slice of Spam on top.  Sprinkle with more Furikake and add another heaping tablespoon of rice.  Press it all down firmly and hold down while lifting can off.  Wrap Nori around.  Cut each finished roll on the diagonal and serve.  *Below is what Musubi looks like without the seaweed wrapper.  I wrapped my musubi up in plastic and refrigerated them overnight.  The next day I removed from fridge, peeled off the Nori, and cut them into bite-size slices.  Much better!

HAWAIIAN SWEET POTATO CASSEROLE

5 medium Sweet Potatoes, baked in 350*F oven for 1 hour, until soft

2 green bananas, diced

1 cup diced and crushed fresh pineapple

1/2 cup brown sugar

2 Tbsp butter, melted

1 tsp cinnamon

2 tsp salt

 Juice of 1 lime (also the zest)

2 Tbsp Cocunut syrup (may substitute honey)

1 cup shredded coconut

1/2 cup crushed macadamia nuts

After potatoes have cooled, peel the skins off and discard skins.  Slice the potatoes into inch thick slices and lay in a single layer in a buttered oblong baking dish.  Sprinkle with brown sugar, cinnamon, salt, and drizzle with melted butter.  Add a layer of pineapple and bananas.  Press down with a spatula to mash the potatoes slightly.  Mix lime juice with coconut syrup and pour over potatoes evenly.  Sprinkle with coconut and macadamia nuts in an even layer.  Cover and bake in a 300*F oven for about 30 minutes.  Uncover and bake another 15 mintues until toasted on top.  You can also broil the dish for a few minutes to toast the top if you wish.

HAWAIIAN LONG RICE  (MrsH’s super easy version)

Cook a box of Pad Thai rice noodles as directed on package.  Drain off most of the water, but leave the noodles a little soupy.  Add a can of Campbells Creamy Chicken soup to the noodles and stir to mix.  Serve with chopped green onion for garnish.

ISLANDER’S COCONUT CREAM PIE

1 prepared pie crust, baked as directed for cream pies

1 package of vanilla pudding, the kind that cooks, not instant

1 package coconut flakes

1 container of Cool Whip with 1 tsp. rum mixed in

Broken, slivered almonds

Cook pudding as package directs using 1/2 cup less liquid.  Add 1 cup of the flaked coconut to the pudding and stir to mix.  Pour into prepared crust and spread to fill evenly.  Chill until set.  Spread Cool Whip over pudding in piecrust.  Sprinkle 1/4 cup of flaked coconut and then almonds over the top.  Chill to set.

HAWAIIAN PINEAPPLE UPSIDE DOWN CAKE

Ingredients

1 8-oz can Dole pineapple slices, drained  (reserve juice for serving)

1 stick butter

2/3 cup packed brown sugar

6 maraschino cherries, halved

In an large oblong cake pan melt butter and stir in brown sugar.  Arrange pineapple slices next to each other in three rows of four. Place a half of a cherry in the center of each pineapple.

Cake Ingredients

2 ½ cups All-Purpose flour

3 tsp. Baking powder

1 tsp salt

1 stick butter, softened

2 cups sugar

2 tsp Vanilla

2 eggs

1 ½ cups milk (or substitute Coconut Milk)

Combine dry ingredients and set aside.  Beat softened butter with sugar and vanilla.  Add eggs one at a time beating after each.  Stir in dry ingredients and milk.  Beat with a mixer until thick and creamy.  Pour over pineapple slices in large baking pan.  Bake at 375 degrees F for 35 to 40 minutes.  Cool 5 minutes, then invert onto a serving plate.  Serve warm.  If you desire your cake a little more moist, drizzle with reserved pineapple juice.

Iced Thai Tea, my latest addiction!!!!!

THAI TEA

1 pkg Thai Black Tea bags (available at World Market)

Water

Sweetener (sugar, agave nectar, honey, Stevia, as you prefer)

Half & Half

Place 8 teabags and 8 cups of water in a saucepot and bring just to the steaming point on high heat on the stovetop, and then remove from heat. Cover and let steep for 15 minutes.  The tea will become dark orange colored.  Add whatever choice of sweetener to taste, I like this tea a little on the sweet side.  When the tea has cooled, pour it into a pitcher and chill in the refrigerator for several hours or overnight.

To serve:  Pour tea over ice in a tall glass.  Gently add Half & Half by the Tablespoonfuls until the top 1/4 of the glass is filled.  Add a straw and serve.  Let guests stir the cream into the tea before drinking.

TROPICAL SMOOTHIES

Ingredients

1/2 ripe mango (peeled and seeded)

 1/2 ripe papaya (peeled and seeded)

 1 ripe banana

 1/4 cup freshly squeezed orange juice

 1/2 cup Cream of Coconut

 1/4 cup plain or vanilla yogurt

 1 tsp. honey

 2 cups ice

Directions

In a blender, mix mango, papaya, banana, orange juice, coconut cream, yogurt, honey, and ice. Blend until velvety.  Serve in martini glasses and garnish with mini skewers of pineapple chunks.

Fire Rock Pale Ale (beer) or Spearhead Pale Ale

Cocktails

FROZEN MAI TAI

1 cup of ice

1 oz. light rum

1/2 oz. dark rum

1/2 oz. Apricot Brandy

1/2 cup fresh or canned pineapple

Splash of sour mix & Splash of orange juice

Blend all ingredients in a blender for 4 seconds on low speed.  Garnish with lime and orange slices, and a little paper umbrella. I f you want to make it non-alcoholic just use 1/2 tsp of brandy flavoring  and 1 1/2 tsp of rum flavoring in a half a cup of soda water with the other ingredients.

CAPTAIN MORGAN’S Piña COLADA

1/2 cup ice

2 oz. light rum

2 Tablespoons Cream of Coconut

1/2 fresh or canned pineapple

1 Tablespoon vanilla ice cream

Pineapple chunks, cherries, umbrellas for garnish

In blender blend until smooth.  If too thick add fruit or juice.  If too thin add ice or ice cream.  Garnish with Pineapple and Cherry, and a little paper umbrella.  You can use a mix to make these if you would rather… and you can make them non-alcoholic by substituting rum flavoring and soda water.

Traditional Island games

Walk on Hot Coals

Dig a shallow pit about three feet wide by six feet long and fill it with charcoals.  Add starter fluid to get the charcoals burning.  Cover them completely with medium-sized smooth rocks and let the rocks get hot.  Any guests who are brave or foolish enough may hop across the rocks with their bare feet.

 ‘O‘O Ihe  (Spear Throwing)

Spear throwing contests were held to display strength and skill for fighting and food gathering. A target, sometimes the stalk of a banana plant, is set up and contestants stand some 15 feet away and attempt to stick a lightweight wooden spear in it.  Watch the video below, which features spear throwing and other traditional games.

A great alternative for the littler ones would be the inflatable Fish Spearing Game at Party America.com or Party City.com, if they still carry it as of the time of this writing.  If not, this is what it looks like and you can make your own version out of a an old toilet seat (padded and decorated) and a bamboo stick.  Hang it in a tree in the corner of the yard.

‘Ulu Maika’ (Rolling Stones)

Based on ancient Hawaiian Makahiki games, this game is played similar to horseshoes.  Stones somewhat resembling modern hockey pucks were rolled between stakes on specially prepared courses to test a player’s skills, or rolled down long courses to show strength. One of the best of the remaining ‘ulu maika courses, approximately 500 feet long, is located on the island of Moloka’i.

Moa Pahe‘e (Dart Sliding)

Using a wooden dart, which resembles a very small bat without the little grip stop on the end (maybe 8” long) with the skinny end and the fat end, you grasp the skinny end and toss the dart like a bowling ball between two stakes.

Conch Blowing

Blowing a conch shell takes skill: you have to know how to purse your lips, where to place them for the best sound, and how hard to blow. (The sounds made by a novice are hilarious!)

Foot Races

Ancient Hawaiians used to hold foot races to see which warrior was the fastest.  You can hold single person races, three legged races, and backwards running races.  Watch the first video above, under spear throwing, for an example.

“Haka Moa”

Type of Hawaiian Luau fighting.  The contestants do not use their hands, and can only stand on one foot, and try to knock their opponent out of the ring.

Tug O’ War

To play this game you will need a 20’ length of rope, a 6’ length of rope, and a bandana.

Divide your guests into two equal teams.  Choose a large grassy or sandy area to play.  Place the 6’ rope on the ground in the middle of the chosen area.  This marks the centerline.  Have teams line up in single file on either side of the centerline, arms length apart.  Tie the bandana in the center of the 20’ rope and place over the centerline.  Each player grabs the tugging rope and at the signal tries to pull the first member of the other team over the centerline.

HIGO BANA

This is a card game played with special Hana Fuda cards.  I was introduced to it by a friend whose mother was Japanese.  She gave me a set of these cards many, many years ago.  I’ve even forgotten how to play it has been so long.  So I went online to see if I could find the rules.  How thrilling to find that this game is played by native Hawaiians under a different name.  The cards do not have numbers on them, only beautiful pictures, but they have point values.  Along with the rules I found some vendors who sell the cards.

Translate Your Family’s Names into Hawaiian  

There are only 13 letters in the Hawaiian alphabet: A, E, H, I K, L, M, N, O, P, U and W. The consonants H, K, L, M, N, P, and W are pronounced exactly as in English. If a name ends in a consonant, add a vowel. Always place a vowel between consonants. The following conversion table can be helpful in translating names:

General Hawaiian Customs

Add some true Island spice to your dinner with genuine Island customs:

Placing a lei over someone’s head is the customary way to welcome or congratulate them.  If the person is close in relationship to you, you would give them a honihoni (kiss) also.  Leis are usually made of flowers, but can also be made of candies or other decorative items.  And when your lei starts to fade and die, don’t toss it in the trash.  It is bad luck to throw a lei away.  A lei is love and you would never throw love away.  Rather cut the string and cast the flowers into the sea or hang the lei outside until it is gone.

I love that it is the custom in Hawaii for young ones to refer to older people as “auntie” or “uncle” when they are old family friends or neighbors of the parents.  That is how we raised our kids to do.  In Hawaii it is appropriate even to address a stranger as “auntie” or “uncle.”  It is friendly yet respectful.

You would never walk into someone’s home in the islands with shoes on.  And it is good manners to bring a small gift with you, possibly a dessert, when visiting someone’s home.  There is a pidgin phrase, “Make Plate” or “Take Plate” that also shows good guest manners.  When you have been invited to share a meal at someone’s home it is customary that you make a plate of food of the leftovers to take home, even if you don’t intend to eat it.  By doing this you are being a good guest and not leaving the mess for the host to clean up and put away.  Many times all the leftovers are packaged up and taken to the homeless.

Unless you are at a sporting event, it is considered rude to talk loudly, or to act like you are entitled to special treatment.  Politeness and reserve are considered a show of good breeding.

Dress is casual, aloha shirts and slacks are worn in place of suits and ties in business, and it is considered rude to stare or look someone in the eye for too long in public places.  And when you go away on a trip it is considered thoughtful to bring back gifts “makana” from your journey.  Most prized are special foods that are unavailable at home.

Sobering thought, isn’t it?

So, what is God’s will?  Well, honestly that would make a terrific Bible study.  There are lots of hints in scripture, “thou shalt not kill,” “thou shalt not steal,” “honor your father and your mother,” “ to “do justice, to love kindness, and to walk humbly with our God?”  To not just bless people and tell them we will pray for them, but to give them what they need, when it is within our power to do so.  The following set of cards would make a terrific Bible Study.

It has been on my heart for some time to create this little set of cards, as a way to get in the habit of “hearing God’s word, and doing it  every day!  I had pictured in my mind a nice laminated set of cards, placed in a nice, sturdy, decorated recipe box or basket in the center of my kitchen table.

Each card would feature a daily scripture and a suggested daily random act of kindness. Card 24

Each morning, as I sipped my coffee, I could draw out one of these cards, read the scripture, then flip it over for a suggestion on how to be a doer of God’s word that day.

At the end of the day I could thank God for giving me seeds to sow, and also pray for the people touched by His love.

In the process I would become a pretty good expert on God’s will, and also hopefully have some fruit to show for this wonderful redeemed life He has blessed me with.

Creating this set of cards was such a huge project, it seems a waste to keep it all to myself.  Me thinks there is possibly someone else out there in cyberland who would LOVE to have a set of them, someone who might want to do this little project with me, or with family, or youth group, or a women’s group.  Or maybe print a set to give away to someone as a gift – like a teenager, who is going off to college?

Be doers of the Word

At the bottom of this post I have provided you with the links to download my pdf files of the cards I created.

There is one file for the front design of the cards, and another file for the back side of the cards.  First you’ll want to print one side and then the other on 8.5 X 11″ sheets of light card stock, then cut them apart.  If you have a laminator you can laminate them to make them more durable and waterproof.

Or, if you’d like a nicer quality set you can save the files and take them to your local print shop and have them print the cards for you on a nice card stock.  There are 91 pages in the file (file size is 185.5 KB), and so whatever your print shop charges for full color copies (Staples charges about .47 for color 8.5X11), multiply that times two for 2 sided color copies.

If color printing is too expensive, you can print them in black and white and they will turn out just fine.  Or maybe your employer would let you print them at work if you bring your own paper or card stock???

RANDOM ACTS AT WORK:

Be generous with praise. Thank others often. Pitch in and help when a coworker is overwhelmed (sometimes because of the death of a loved one, or recovery from an illness or accident, etc., or just learning the job).  Leave a small gift (book, music CD, pretty pen, Starbucks gift card, etc.) in their mailbox, just because. Surprise someone with flowers, or balloons, whom you notice never receives such things.

“Do not merely look out for your own personal interests, but also for the interests of others.” Philippians 2:4

RANDOM ACTS AT CHURCH:

Offer to clean an elderly member’s home. Take an elderly member to a doctor appointment. Take a casserole dinner to a new mom and help her fold clothes. Offer babysitting to a young couple for a date night. Rake leaves or shovel snow for a shut-in, or someone recovering from surgery.  Buy groceries for the pastor/wife. Pick up a friend and take them to church with you. Take a new member to breakfast or lunch.

“So then, as we have opportunity, let us do good to everyone, and especially to those who are of the household of faith.” Galatians 6:10 ESV

RANDOM ACTS IN THE COMMUNITY:

Here is an awesome and really fun sounding idea to do with our small groups (church cell groups) that a friend posted on Facebook:

“Oh my goodness! What fun and what a blessing. My church has a number of small groups that meet once a week for more intimate fellowship, Bible study and  service to our community. We are doing a weekly service in our town called “Acts of Random Kindness.” We arrive with a list of acts of kindness we will do, in an hour, as we break up in smaller teams and compete with each other to accomplish the acts and make it back to our host house ahead of other teams. We ran off and paid for people’s groceries, went to gas stations and paid for gas for people and cleaned their windshields, gave flowers to unsuspecting random recipients, gave tips to waitresses without receiving their service, filled washers and dryers with quarters for people at public laundry mats, sang to fast food counter servers and retail sales persons, dropped gift baskets at random houses, read an encouraging poem to a person we came across, and many other acts that let people know they are special and that we care. The way people responded to us was so touching. I didn’t want the giving to stop. I told our leader that it reminded me of when I was a teen and we would do Chinese fire drills. Our adrenaline ran wild. As teams, we ran to each service, all participated, and then we ran back to the car laughing and feeling great about the lives we touched. I could do this every day! I received more than I gave. I think that was the lesson to each of us participating. It is such a joy to give. And…to give randomly, to whoever we see in front of us at the time. I encourage everyone to open your eyes to people you can show kindness to whether you think they deserve it or not.”

RANDOM ACTS AT HOME:

Leave a little note of encouragement in children’s lunchboxes or backpacks.  Leave a sweet note on the mirror for spouse. Send a love text or prayer of encouragement to spouse during the day. Warm up and scrape the ice off of spouse’s vehicle – or turn on the  A/C so the car is cool before they go to work.  Surprise spouse with a little gift in their car, or on their side of the bed, or sitting next to their favorite chair in the living room (a new book, a new pair of pajamas, new socks, new gloves, movie tickets, new tool, lotion, candybar, flowers, etc.), just because.

“But if anyone does not provide for his own, and especially for those of his household, he has denied the faith and is worse than an unbeliever.” 1 Timothy 5:8

RANDOM ACTS FOR FRIENDS:

Send a card. Invite to lunch. Leave a small gift (potted plant, bottle of wine, bag of groceries, magazine/newspaper/book, a pretty wreath for their door, etc.) on the doorstep. Invite them to a pedicure. Make a mammogram appointment together and go pick her up. Invite to go shopping (clothes, antiques, farmer’s market, etc.). Invite to a play or movie.

RANDOM ACTS FOR NEIGHBORS:

Shovel their sidewalks while they are at work. Pull their weeds.  Leave a potted plant on their doorstep. Invite them for supper. Visit with them over the fence.  Help them wash their car, work on their car, repair a fence, etc. if you see them out doing that. Mow their yard while they are at work. Make a pretty wreath for their door.

Get ready for TACO TUESDAY!!!!!!  This might be one of the more coveted recipes in my collection.  I am often asked how I make my tacos.  It is also a frequent request for Family Supper night by daughter, son-in-law, and the grandkids.  It’s one of my husband’s favorite dinners, and really one of my favorites too!!!!  Quick and easy!!!!

Let’s start with the meat

I use 2 lb. of quality ground beef (to feed 4 adults and 2 kids) – a good organic, grass fed, angus beef.  I break it apart in a frying pan and toss while cooking over medium high heat until browned.  Drain off and discard the fat .  I then sprinkle 2 packets of Lawry’s Taco Seasoning Mix over the meat, and then I fill the empty packets with water and pour the water over the seasoning and stir it well into the meat, with the heat turned down to medium low.  To this I add about a half cup of salsa (fresh or canned) and stir that altogether.  I then let the meat simmer on low heat until the tacos are ready to assemble.

The meat will become drier the longer it simmers.  I personally like it dry so that it doesn’t make the bottom of my tacos soggy.  I don’t like when they fall apart and all the stuffing falls out.

Pico de gallo

I use about 1 1/2 cup of chopped sweet cherry tomatoes, 1/2 cup chopped fresh jalapenos, and 1 cup chopped green onions (or a small sweet white onion if I don’t have green onions on hand), then add about 1/2 cup chopped fresh cilantro, 2 cloves of garlic minced, the juice of two limes, and a sprinkle of salt to taste.  If the jalapenos are really mild, I sometimes add a pinch of cayenne for some kick.

Toppings

I chop one whole bunch of Romaine lettuce into small shreds.

I like to shred my own cheese (pepper jack) when I’m feeling ambitious, but often use a Mexican cheese blend that is pre-shredded already.

I buy the small Old El Paso brand taco shells (2 pkgs to feed my family of 4 adults and 2 kids because the men will easily eat 6 tacos apiece or more).

I preheat my oven to 360*F, and set the shells in a baking pan.  When the oven is ready I pop the pan of shells in for about 6 minutes, or whatever time is recommended on the package.  This is an important step because it makes the shells nice and crispy!!!

 

 

Taco Sauce

I actually use a variety of sauces.  I like to try new ones.  The green tomatillo Herdez or La Costena hot sauces (medium) are both really good standbys.  I like the Taco Bell hot sauce (Diablo), and the DelPrimo sauces are all good.  But my favorite of recent is El Gallo flame roasted Jalapeno.  It comes in a bag with a little screw top spout (medium).

To assemble the tacos I remove the shells from the oven and quickly fill them with meat, dispersing it evenly among the shells.  I sprinkle cheese over the meat in each shell, and then add the lettuce.  They each then get a spoonful of my fresh Pico and a generous pour of tomatillo taco sauce.  That’s it!  Mmmmmm…. let’s eat!!!!!!

Now some people might like to add chopped black olives, maybe some sour cream, possibly some sliced avacado, and that’s all good, but personally, I can’t bear to mess with perfection.

If you’d like to add a couple of sides, I love charros or refries and Mexican Rice.  And you can never go wrong with Sopapilla Cheesecake for dessert!!!!!  Hubby washes his meal down with a good Modelo cerveza!  I just like iced tea.  Gracee will take a Margarita, if I make her one, and the kids like horchata.

Whether you are looking for a fun dinner party for Mardi Gras, or just LOVE hot and spicy Cajun food in the middle of the winter, these recipes will have you smacking your lips for more.  This is a collection of my most favorite Cajun recipes.  Good luck choosing which dishes to make first.  If you are like me, you’ll want to just celebrate NOLA for the whole month of February with a different Cajun dinner each weekend!

This was one of my favorite meals I did with my family one year for my dad’s birthday, and also on another occasion with my cooking club friends.  It’s a ton of fun!  Be careful though, it’s a little bit of a choke-fest if you do the crab boil indoors.  Plan to have some sort of good ventilation, or else cook that dish outdoors.

SHRIMP ETOUFFEE

If you buy an Etouffee mix and add shrimp or crawfish to it, you’ll end up with something that resembles brown gravy over rice with crawfish in it. It has a good flavor, but nothing beats homemade! I like mine on the spicy side, so I am fairly generous with the cayenne! The trick to getting just the right spice is to add some in the beginning, some during cooking, and some at the end.

2 lb Good Quality Shrimp, Peeled and Deveined
          (Use the shells to make a shrimp stock – recipe below)

2 Tbsp Creole Seasoning
          Make your own: 2 Tbsp Paprika, 1 Tbsp Cayenne powder, 2 Tbsp garlic powder, 1 Tbsp onion powder, 1 Tbsp freshly ground black pepper, 1 Tbsp kosher salt, 1 tsp packed brown sugar, 1 tsp each freeze-dried chive, thyme, oregano, and cilantro. Whirl in a coffee grinder or Bullet until blended and a fine powder. Store in a tightly sealed container. Use within 1 year.

4 Tbsp Butter
½ Cup Onion, Chopped
¼ Cup Celery, Chopped
¼ Cup Bell Pepper, Chopped
¼ Cup Flour
1 ½ Cups Shrimp Stock
¾ Cup fresh Tomatoes, diced
2 Tbsp minced Garlic
I bundle of Fresh Thyme
2 tsp Worcestershire Sauce
1 tsp Hot Sauce (Crystal or Louisiana Gold)
Also: salt, black pepper, and cayenne to taste
½ Cup Green Onions, thinly sliced
3 Tbsp minced Italian Parsley
3 Tbsp Unsalted Butter
Rice (I like Comet Long Grain Rice, prepared as directed on the package)

Place shrimp in a Ziploc bag. Season with 1 Tbsp of the Creole Seasoning and shake to coat on all sides. Store in refrigerator until later.

Make the shrimp stock now, recipe follows. Cook the rice. I usually cook mine and then set it off the burner without lifting the lid and let it rest for a while (maybe 20 to 30 minutes) to let it dry out a little. These three things can be done the day before and stored in the fridge.

Melt the butter in a large skillet; add the onions, celery, and bell pepper. Sauté until translucent. Whisk in the flour to make a blonde roux, stirring constantly, about 3-5 minutes. Stir in the remaining 1 Tbsp Creole Seasoning.

Add a small amount of the shrimp stock, stir well to form a paste, add the remaining stock gradually, whisking constantly. Bring to a boil, then reduce to a simmer. You may need a little more stock, but the end result should be the consistency of a gravy, not too thick, not too thin.

Add the tomatoes, garlic, thyme, Worcestershire, and hot sauce, salt to taste (yes, taste it), black pepper, and cayenne. Simmer for 20-30 minutes.

Add the seasoned shrimp that’s been holding in the fridge, green onions, and parsley, simmer for 10 minutes more or until the shrimp are cooked through. Stir in the 3 Tbsp butter, and adjust the seasonings to taste.

Serve over hot cooked Rice. If the rice was prepared the day before it can be reheated in the microwave for a minute or two. Serves 4 as an appetizer or 2 as a main dish.

Shrimp Stock Recipe

The Shells and tails from 2 lb. of Shrimp
½ Cup chopped Onion
¼ Cup chopped Celery
2 Garlic Cloves
1 Lemon sliced
2 Fresh Bay Leaves
3 Sprigs Fresh Thyme
1 tsp. Black Peppercorns

Add all ingredients to a 2 qt. saucepan. Cover this with cold water, it should be about 6-8 Cups. You’ll need 1 ½ Cups for the Etouffee. Bring almost to a boil, reduce the heat to a low simmer. Simmer for about 45 minutes to an hour. Strain.
Tip: When adding fresh Thyme to a simmered dish like this, I always bundle the Thyme tightly with butchers twine. The leaves will remove themselves while cooking, and you will get all of the flavor from the stems. When ready to serve just remove the bundle of stems along with your bay leaves.

Gumbo.

CAJUN SEAFOOD GUMBO (or Chicken and Sausage Gumbo)

Ingredients

12 ounces fresh or frozen peeled and deveined shrimp (or 2 chicken breasts)

6 ounces fresh or frozen crabmeat (or Andouille sausage)

1/3 cup all-purpose flour

¼ cup cooking oil

½ cup chopped onion

½ cup chopped red sweet pepper

½ cup chopped green sweet pepper, &/or 2 jalapenos

4 cloves garlic, minced

¼ teaspoon salt

¼ teaspoon black pepper

½ teaspoon ground red pepper, more to taste

3 cups chicken broth, heated

1 14-1/2-ounce can tomatoes, cut up

1-1/2 cups sliced okra or one 10-ounce package frozen cut okra

2 bay leaves

3 cups hot cooked rice

Directions:
1. Thaw shrimp and crab, if frozen (or cut chicken into bite-size pieces and brown in butter in a frying pan).

For roux, in a large heavy saucepan or Dutch oven combine flour and oil until smooth. Cook over medium-high heat for 5 minutes, stirring constantly. Reduce heat to medium. Cook and stir about 10 minutes more or until roux is light peanut-butter-brown.

2. Stir in onion, red sweet pepper, green sweet pepper, garlic, salt, black pepper, and ground red pepper. Cook over medium heat for 3 to 5 minutes or until vegetables are just crisp-tender, stirring often.

3. Gradually stir in hot chicken broth. Stir in undrained tomatoes, okra, and bay leaves. Bring to boiling. Reduce heat and simmer, covered, for 30 minutes.

4. Stir in shrimp, and crabmeat (or andouille). Simmer, covered, about 5 minutes more or until shrimp turn opaque and oysters curl around the edges. Discard bay leaves. Serve in bowls with rice. Makes 6 servings. For extra heat add Creole seasoning, cayenne, or Louisiana Hot Sauce.

JAMBALAYA

I like the boxed Zatarains mix, and usually add leftover cooked chicken, andouille sausage, and shrimp (or crawfish) to it. Easy-peasy!

CRAB BOIL

1 box Zatarains Crab Boil
1 whole Dungeness crab, or 1 pound king or snow crab legs
1 pound crawfish
2 pounds shrimp (whole, or shell on)
1 bag small red or fingerling potatoes
1 pound Andouille sausage
4 cobs of corn on the cob, broken into 2 inch pieces
Cajun seasoning (like Slap Yo Mama)
Garlic butter (3 cloves of garlic, smashed and minced, and added to 3 sticks melted butter)

Instructions

Using either a large soup pot with a lid or electric turkey fryer, fill with 3 quarts water. Bring to boil and add salt, plus 1 bag of Zatarain’s Crab Boil (if doing this indoors you will want all the windows and doors open because of the fumes – best done outdoors), 1 lemon quartered, and cayenne pepper to taste. Place the basket inside your fryer. If you are using a soup pot you will just have to pour the liquid out at the end and catch your pot contents with the lid or in a colander. Drop in crab and boil vigorously for 5 minutes (unless you are using precooked frozen, in which case you will add it with the shrimp at the end). Add potatoes and broken cobs of corn to the pot and boil vigorously for 10 minutes. Add the crawfish, chunks of andouille, and shrimp. Boil for 2 minutes. Remove from heat and allow seafood to remain in water for 5 minutes after boiling.

Lift contents from water or drain water off (save, strain, and freeze for use in other dishes). Drizzle seafood with melted butter and sprinkle with Cajun seasoning. Toss to coat. Cover your table with a plastic tablecloth; lay a beach towel or two over that and then lay butcher paper over the whole top. Dump the pot contents out on the butcher paper, in the center of the table. Place lemon wedges and extra cups of garlic butter around. Let everyone help themselves, eating with their fingers. You will want to have plenty of paper towels nearby and possibly bibs. Be sure to have some crab crackers and forks available too.

I got super lucky one day and found little bundles in my grocery store’s (HEB) lunchmeat counter of the three meats for this sandwich.  The packages were nestled in among the shredded cheeses, near the Lunchables section.  The bundles contained the three meats grouped on top of each other and laid on parchment paper, and then stacked on top of each other, enough for four sandwiches.  I bought two packages feeling very lucky, because it is impossible to find mortadella or cappicola in my town.  And to my chagrin I’ve never seen them again.  My HEB carries foccacia, but doesn’t carry the bread boules or the Olive Salad, so I’m sure the meat was a mistake purchase, but Walmart carries the Olive salad, and often has bread boules, the clam chowder size ones.

So, this is a link to Emeril’s recipe (simple) for the sandwich.  And this is another little bit more involved recipe I found in a recent search.

3 Cajun Supper

Beverages:

COFFEE AU LAIT
6 rounded tablespoons dark roast New Orleans coffee with chicory (Café Du Monde or Community Coffee)
6 cups water
6 cups milk

Brew your coffee in a drip coffeemaker and serve with half coffee and half scalded (not steamed!) milk.
Scald, do NOT boil, the milk. Pour coffee into warmed large mugs, then add the milk. If you like yours sweet, add two teaspoons of sugar to the cup. YIELD: 12 cups

Iced Tea

Make a gallon of sun tea using a family size tea bag (black and orange pekoe tea) and fresh, filtered, cool water. Set your glass container in the sun and let it brew until a rich brown color, about an hour or so on a hot summer day. Remove tea bag and chill in the refrigerator. I am a big fan of the cold brew tea bags! Just fill your container, add tea bags, and put in fridge. It brews in no time, is never cloudy, and tastes pretty darn close to the sun brewed.

In the south they love their tea sweet. It is easy to serve both sweet and unsweet by making a simple syrup that will dissolve quickly in iced liquids. You can make a quart of simple syrup by dissolving 5-6 cups of sugar in 3 cups of cold water in a saucepan over medium-high heat. Once it’s dissolved and clear, cool and pour into a bottle with a lid. Store in the refrigerator – writing the date that you made it on the jar. If you notice it starts to turn cloudy or get moldy, toss it and make some fresh. Use for sweetening tea, coffee and cocktails. If you’re not going to use it right away, dilute it with 6 more cups of water and fill your hummingbird feeders.

Cocktails:

SAZERAC
1 teaspoon of simple syrup (see recipe above) 3 – 4 dashes Peychaud’s bitters 2 ounces rye whiskey (most New Orleans bars use Old Overholt) ¼ teaspoon Herbsaint, a New Orleans brand of anise liqueur (You may use Pernod, or some other pastis or absinthe substitute) Strip of lemon peel

The traditional method: Pack a 3-1/2 ounce old-fashioned glass with ice. In a cocktail shaker, moisten a sugar cube with just enough water to saturate it, then crush. Blend with the whiskey and bitters. Add a few cubes of ice and stir to chill. Discard the ice from the first glass and pour in the Herbsaint. Coat the inside of the entire glass, pouring out the excess. Strain the whiskey into the Herbsaint coated glass. Twist the lemon peel over the glass so that the lemon oil cascades into the drink, then rub the peel over the rim of the glass; do not put the twist in the drink).

HURRICANE (It’s 5 o’clock somewhere!)
1 ounces light rum
1 ounces dark rum (151 proof)
1.5 ounce orange juice
1.5 ounce fresh lime juice (NOT Rose’s or RealLime)
1/3 cup passion fruit juice or 1 tablespoon passion fruit syrup
1 teaspoon superfine sugar
1 teaspoon grenadine
Cherries with stems, and orange slice to garnish
Ice cubes

In a cocktail shaker, mix the rum, passion fruit juice or syrup, the other juices and the sugar until sugar is dissolved. Add the grenadine, and stir to combine, then add ice and shake. Half-fill a hurricane glass with ice, then strain drink into glass; add ice to fill. Garnish with orange slice and cherries.
Option: If you’d like something easier, look at your local liquor mart for packets of Pat O’Brien’s Hurricane Mix and follow directions.

COLLEEN’S BANANAS FOSTER
This photo was taken at a cooking club gathering, by the host.  We were joking that she was getting evidence photos to explain to her insurance agent how we burned her house down.  Ha!  This is not entirely the traditional way of making true Bananas Foster, because I am not a huge fan of mushy bananas, plus I like lots of sauce. I’ve made this a few times and this is the way I personally like it best. It’s sooooo easy, but your guests will oooo and ahhhh (or take fear photos) at your flame-boyant cooking panache. You’ll want to make this where your guests can see you.

INGREDIENTS
1 stick butter
2 cups dark brown sugar
2 teaspoons cinnamon
½ cup banana liqueur
½ cup of dark rum
4 bananas, cut in slices (I like mine still with a hint of green & no brown spots)
1 carton vanilla ice cream (1 large scoop per guest)

INSTRUCTIONS

Melt butter in a deep-sided skillet. Add brown sugar and cinnamon, and let cook until sugar is melted and sauce is bubbly. Slowly add banana liquor and gently stir until just warmed. Slowly add dark rum and gently stir until just warmed. Remove pan from heat and ignite with a long-stemmed BBQ lighter. Carefully stir with a long-handled spoon until flames subside. Place pan back on the stove with the burner off. Add the banana slices and gently toss with warm sauce (I don’t like mushy bananas, so that’s why I only add them at the end).

Place ice cream in serving dishes and top with several banana slices from the pan. Spoon warm sauce over ice cream and serve immediately.

MISSISSIPPI MUD PIE

Ingredients

1 Oreo cookie pie crust

2 pints coffee ice cream, softened slightly

1/3 cup chocolate fudge topping

1 cup whipped cream

¼ cup slivered almonds, toasted

Directions: Spoon softened ice cream evenly into chilled crust. Drizzle fudge topping over ice cream then return pie to freezer for at least 1 hour. When ready to serve, decorate with whipped cream and sprinkle with almonds. Makes one 9-inch pie.

These are heavenly little donuts that go spectacularly with Coffee au lait. I recommend the cooking class recipe offered at Southern Living .  My HEB carries the box mixes.

KING CAKE

A King Cake is basically the same recipe as a giant cinnamon roll made into a “crown” shape (Monkey Bread in a Bundt pan would work fine), and the icing is covered in purple, yellow, and green colored sugar, and heaped on top. It is sometimes decorated with glitter sprinkles, mardi gras beads, or masks.  Also, a tiny plastic baby is hidden in the dough before the cake is baked.  When the cake is served at a Mardi Gras party, the guest who ends up with the baby in their serving must host the next soiree!

Background Music: Zydeco Stomp CD, or a New Orleans Jazz CD, some Hank Williams Jr., or a good Harry Connick Jr. album.

Play a game: Gambling is a big thing in New Orleans on the river boats. Decorate a room of your house to look like a Riverboat.  Play card, dice, and domino games, or the game Wits & Wagers.   Another game with a NOLA theme is Party Gras (which is a game played all night during other activities using Mardi gras beads – similar to the clothes pin game played at baby showers).

 

 

Watch a movie: Mark Twain – A Film Directed by Ken Burns (2002) would be a  good choice for documentary watchers.  Streetcar named Desire (an oldie).  The Frog Prince (for families with kids).  Double Jeopardy with Ashley Judd, is set partially in New Orleans.  Ghost Rider, with Nicholas Cage.

You could also use this meal as a great starter for a video Bible study (the one I am thinking of is Breaking Free, by Beth Moore, as it was filmed entirely on location in New Orleans, both the original and the revised versions, and is an excellent small-group Bible study) to get started in your home with your friends, neighbors, coworkers, etc.  After dinner you could play the introductory video, pass out the workbooks, and get it started.

Okay, the day of my party has arrived.  The food is cooked.  The table is set.  My guests are beginning to arrive.  I’ve shown each where to stash their coats and purses, and pointed them to the beverage station.  I have a few things to finish up in the kitchen, but also want to warmly greet each person who arrives, never-the-less in my flushed and busy chaos I can’t forget what it feels like to be the guest.  I’ve been a guest.  I know very well the inevitable awkward little spaces of time when introverted people start to sweat a little.  I know what it feels like to be out of my comfort zone.  If I don’t know the host very well, or any of the other invited guests, it is easy for me to feel a little bit ruffled.  I’m not sure where to sit or stand, or who to go and mingle with.  I wonder if it would be rude to sit at the table, or okay to hang with the ladies in the kitchen.

Life is so much easier for Sanguines and extroverts.  I  appreciate having them in my life.  I am honestly sooooo much better at coming up with ideas for parties: food, decorations, music, and games, than I am at the social aspects.  It’s probably my biggest hurdle to being hospitable.  I’m not so much worried about my house being clean enough, or putting on airs with a lot of nice things.  It’s the social part that gives me a heart attack.  I usually won’t go out on a limb to invite people over unless I know them really well (family), or I have an accomplice who is funny and outgoing, and with a real gift of gab.  Without my security blanket I’m pretty much a basket case.

This is where a nice set of Conversation cards really comes in handy for those awkward lulls during dinner when I can’t think of anything to talk about, and God forbid am surrounded also by introverts.  They rescue me.  Conversation is what draws us all out of our shells and helps us all to get comfortable with each other, and engaged – as long as we’re not put on the spot in front of everybody.

Sometimes, it’s hard to share our most personal thoughts, ideas, and opinions (unless we know where those around us stand), or without a glass of wine to loosen us up first – ha!, so a set of conversation cards can be a good way to get things going.  There are a ton of sets out there (Amazon).  Food for Talk by Julienne Smith is one of my favorites.

I have found that the best way to get past being uncomfortable and vulnerable in conversations with new people is by practicing treating them the way I want to be treated, and in my limited experience I have found that sometimes when I took that leap of faith and shared my heart with someone, it actually, occasionally landed in safe hands, and it very often was the catalyst to a beautiful friendship.

I have worked pretty hard to be a safe place for other people’s conversations as well. Gossips are not good friends!  Experience has taught me, that it is okay to be observant, cautious, and protective. It is like looking both ways before crossing a road. But when it looks as if the coast is clear, I encourage you (and deal a pep talk to myself as well) to try putting just a little of ourselves out there. And in return, also be a “safe place” for other people’s thoughts and dreams and ideas.

Another thing I struggle with is ADD.  When my mind is racing with self-conciousness, it is hard to pay attention, but we all appreciate a good listener.  Weep with those that weep.  Rejoice with those who rejoice.

I will pray for you, and for myself as well, that we learn to relax and just have fun.  And I pray that our minds don’t batter us too badly later as we lay in bed replaying every careless word we spoke and every clumsy gesture.  Please say I’m not the only one who does this!  Well, if I have a witness, at least you know you are not alone.

While the rest of my fellow “gringos” are having “Ugly Sweater” parties, Cookie Exchanges, and Gift Wrapping/Mulled-Wine drinking parties for Christmas wouldn’t it be fun to host a TAMALADA just to be different?

I recently tried my hand at making Tamales, and to my delight they turned out, and were actually delicious (thank God), but boy howdy were they a ton of work. Took me ALL DAY! I’m absolutely addicted to tamales at Christmas, but I’m thinking if I ever decide to make them again I will want to make a party out of it, because many hands make light work. So here’s what I’m thinking…

Who to invite? Hmmm, well they’ll need to be reliable guests, who promise to make their dish and show up for the assembly process.

I could send them each a recipe card, after they RSVP and volunteer for a portion of the tamale-making they want to do. The host (which will be me, if I manage to muster the courage to actually do this) will provide snacks, and beverages – I’m thinking some fun drink choices would be Sangria; a Hot-Mexican-Chocolate Bar; Horchata Smoothies; and blended Margaritas. I’ll need to remember to find a good Latino Christmas Album or two or three to play for ambiance during the party, and also dig out an entertaining game to go with the party, that we can play while we’re waiting for the first batch of tamales to come out of the steamers. A couple of my favorites are Mexican Train (dominoes) and Canasta (cards)!

Or, if my family/friends want to bring their Christmas cards, stamps, address labels, and stationery we could get our Christmas cards ready to mail out while we wait for tamales, and we can snack and visit while we write and fold and lick and stamp! Make it kind of a working Tamale party! I can offer this on the invitations, and then discuss it with everybody when they RSVP.

Here’s how I’m thinking we can split up the cooking…

Guests #1, 2, & 3 could each make a 3-lb pork roast (half of the recipe listed below) and shred it, discarding any bone or cartilage, and reserving and bringing the strained pork broth to the party.

So, I know from experience that it’s going to take at least 4 hours to make the finishing touches on the meat and masa, then assemble, and steam the tamales. So I’ll plan my party accordingly when filling out the details on the invitation. Maybe I should have it on a Saturday or Sunday afternoon?

Once my guests have RSVP’d and volunteered for the dish they want to make, I’ll send them out the recipe card for their items (shown above, in case you missed them).

PREPARING FOR MY PARTY:

Buy whatever groceries and beverages I’ll need and give myself time to prepare them before the party.

Set up a station for the final masa preparation. I will need counter space, a large bowl, a mixer, and a cup of warm water to test the masa in.

Set up a work station for the final preparation of the red sauce. I will need a large sauce pot for the stove, and a blender or food processor. Someone will be making a roux in the sauce pot, and another person will be blending the red sauce (softened chilies and broth from pork). The pork and the red sauce will be added to the roux.

I’ll set up a large table for assembly. Place the ingredients down the center of my table, the husks next to the masa, the masa next to the meat, and finally a cookie sheet at the end to pile the tamales on. I’ll put a person at each ingredient and we’ll pass each tamal along. They’ll go together pretty quick. I will need some clean kitchen towels and possibly a roll of paper towels, also a masa spreader or spatula, a spoon to measure the masa, a spoon to measure the meat, and a large cookie sheet. And afterward some tin foil to wrap the tamales in for sending home or freezing.

Make room in my refrigerator for whatever uncooked tamales, and whatever else needs refrigerated.

Set up the steamer pots (illustrated below). I will need two large canner size pots with lids and a steamer basket for each inside. I will also need two clean kitchen towels and water for those.

Set up a beverage station with various beverages as mentioned earlier. I can set up a hot cocoa bar, I can also set out a large thermos of blended Margaritas, and a pitcher of Sangria. I might also want to set out some iced tea and water and a cooler of ice, and a variety of glasses and mugs.

Set up an appetizer/snack table where guests can nibble as we wait for the tamales to cook. Decide what appetizers I will serve at my party, and have them ready when guests arrive. I will need serving plates, bowls, spoons, etc. I might want to have a pretty tablecloth for this table, and some festive table decorations.

Set up the music that I will have playing in the background of my party.

Set out a couple of game choices (mentioned earlier), so that once the tamales are all assembled, and the table has been cleared, we can start having some fun. Or if we all prefer doing Christmas cards, I will need to *be sure to note this in my party reminder call, so my guests will know to bring their supplies!

Of course I’ll want a clean house, a spotless kitchen, and a tidy bathroom at least. Ugh! Sometimes this keeps me from throwing parties! My house is truly never clean enough.  Oh suck it up girl, get to scrubbin’ it’s gonna be fun!!!!!!!!!

A day or two before the party I can send a reminder via Text/eMail/Phonecall, so my guests will know if we’ll be doing Christmas cards during the party, or just playing games and eating. They might need the prodding for the dish they are making too!

Day of the party designate various ASSEMBLY LINE jobs:

Someone to wash all the dirty dishes and clean counters (my least fav job)

Someone to make the roux, and mix the meat with the sauce

Someone to finish making the red sauce

Someone to finish making the masa

Assembly line Husk Person, who will dry and pass the husks

Assembly line Masa Spreader person

Assembly line Meat person, who will also wrap tamales

Tamale tie person, who will tear off strips of husk to tie around tamales and stack them on a cookie sheet

And finally someone to set up and load steamers, and babysit them with water

Pork for Tamales

2 3-lb pkgs Pork Carnitas or a shoulder roast

1 large onion, chopped

5 cloves garlic, broken in pieces

3 jalapenos, chopped

1 Tbsp salt

Enough water to cover

DO AT HOME: Place pork roast, onion, garlic, and salt in a large pot. Cover with water. Bring to a boil, then reduce heat to simmer over medium heat until pork is very tender, about 3 hours. Remove pork from water and shred. Store in a Ziploc bag and keep in refrigerator for up to a day, until ready to use. Strain liquid and reserve for use in making the red sauce and the masa. Place in sealed jars in refrigerator for up to a day. Skim the fat off the broth and place it in a separate ziploc bag to use for the roux. Bring the pork, broth, and skimmed fat to the party.

Carnitas Pork

DO AT THE PARTY: Once at the party someone will need to make a roux (see recipe below) and then the pulled pork can be combined with the roux and the red sauce.

Red Sauce

4 ounces California (or Cascavel) chile pods, seeds and stems removed

4 ounces New Mexico chile pods, seeds and stems removed

1 1/4 cup reserved pork broth

1 1/4 cup water

1 Tbsp salt

3 cloves garlic, broken in pieces

1 heaping teaspoon ground cumin seeds

DO AT HOME: Toast chilies in a hot skillet over medium high heat for 2 to 3 minutes, until fragrant. Rinse chile pods. Fill a large pot with water and bring to a boil. Add rinsed chile pods and cook until chile pods are softened, about 15 minutes. Drain water off chilies and discard the water. Add salt, garlic, and ground cumin. Seal in a plastic bag until ready to blend at the party. This can be done up to a day ahead.

DO AT THE PARTY: Pour chilies, broth, and water into a blender and blend until smooth. Place in large kettle until ready to mix with the pork.

Roux: Someone will need to make a roux using ½ cup lard, reserved from roast, and ½ cup flour. Cook on the stove, stirring continually until peanut butter colored. Toss in the pork and red sauce and mix well. I also like to chop another jalapeno or two to add to the meat. Cover and refrigerate, or if near to being ready to assemble, place on the assembly line.

Masa

2 pounds Manteca lard, divided

2 teaspoons baking powder, divided

2 tablespoons salt, divided

5 pounds ground masa harina, divided

2 to 3 cups broth reserved from cooked pork roast (or chicken broth), divided

½ bunch Cilantro, finely minced

Small white onion, very finely minced

½ cup Tomatillo Salsa, or Salsa Verde

Reserved pork broth with skimmed fat

DO AT HOME: Place 1 pound of lard in a KitchenAid® Stand Mixer and mix until fluffy, scraping sides so the lard stays in the center of the mixing bowl. (The flat beater is the ideal accessory for mixing.) Add half the baking powder and half the salt to the lard and mix together. Add half the masa harina and mix together. Seal in a ziploc bag in the fridge.

Now do the other half of the same ingredients, and store in the fridge in a ziploc bag for up to a day. Please bring to room temp before bringing to the party.

DO AT THE PARTY: Place one room temperature batch of the masa in a large bowl. Slowly add half the broth, half the onion and cilantro, and half the salsa verde, to and mix until combined. The mixture should be about the consistency of smooth peanut butter. If not, add more broth as necessary. Test the masa by taking a small piece (1/2 teaspoon) and dropping it into a cup of warm water. If it floats it is ready; if it sinks, add a little more lard, beat for another minute and test it again. Repeat this process until the masa floats. Cover and set on the assembly table.

Repeat the process with the remaining batch of masa.

Corn Husks

DO AT HOME: Take husks from package and rinse well in the sink, removing any silks or debris. Fill a large stock pot with water and press the clean husks down to submerge them. Bring water to a boil and soak husks in gently boiling water for about 1 hour. You may need to flip the stack occasionally so the top ones get pliable. Drain water from husks but keep husks in the kettle with the lid on.

DO AT THE PARTY: Set warm, soaked husks, in covered pot on the assembly table. Keep a clean kitchen towel nearby to dry the husks just before spreading them with masa, otherwise the masa won’t stick.

ASSEMBLY LINE

Tamale Assembly Station

Place the husks, masa, meat, and cookie sheet down the center of a table, and seat my guests all around it, except the guest who volunteered to do the mountain of dirty dishes. Assembly will start with corn husks being dried off and passed to the masa person next to them, that person will spread it with masa and pass it to the meat person next to them; that person will top it with meat and wrap it and hand it across to the tie person; that person will tear off a little strip from a boiled husk and use it to tie around the tamal and lay on the cookie sheet. Once the cookie sheet is full and heaping, the last person (ME) will pack the tamales vertically in the steamer with the open end up and start them steaming.

Assembly Line

SPREADING THE MASA: Place the wide end of the husk on the palm of your hand (or on the flat work surface), narrow end is at the top. Starting at the middle of the husk spread 2 tablespoons of the masa with a spatula or masa spreader in a rectangle shape, using a downward motion towards the wide-bottom edge. Do not spread the masa to the ends; leave about a 2-inch border on the left and right sides of the husk. Pass to the person with the meat (or other) filling. There is too wide of a swath of masa on this husk shown below, and also it’s not quite thick enough. You only need enough masa to wrap around the meat and a little extra to hold the husk closed.

ADDING THE MEAT: Spoon 1 1/2 tablespoons of your chosen filling down the center of the masa. (When I ran out of meat filling and still had masa, I started making Pepper Jack Cheese and Jalapeno filling. Fold both sides of hust to the center over the top of the meat; finish off by bringing the pointed end of the husk toward the filled end. Pass tamale to the person who will tie the tamales closed.

TAMALE TIE PERSON: Make sure each tamal is snuggly closed and will not open during steaming. You can secure by tying a thin strip of corn husk around each tamal. This will keep the tamal from unwrapping during the steaming process, especially if the husk is too thick and will not stay folded. Stack wrapped tamales on a cookie sheet.

HOST: Prepare the steamer pots… (You will also load the steamer pots)

Steamer Pot

This is my tamale steamer. I can only fill water up to the little rack, but not above it, and start it simmering on the stove. The steamer pot needs to be tall enough for our tamales to sit up vertically above the water and still fit the lid on. (If you don’t have a double boiler, you can improvise like I have. All mine is, is a round cooling rack setting on top of a brick, which I’ve washed several times in the dishwasher, or I could also use a small colander placed down into the bottom of my soup kettle and my rack on top. This set up works perfectly. Each steamer will need to have a clean kitchen towel and a lid.

When a cookie sheet of tamales is piled up high, they can be loaded in the steamer…

Fill the top part of the steamer with tamales. Stand the tamales up vertically, open ends up and folded ends at the bottom, and make sure the folded part is either tied up, or held in place with another tamal. Pack the tamales snug enough so that they won’t fall over during cooking, but not so tight that the steam can’t get in around them. In other words, don’t cram and squish them as tight as they will go, but let there be too much space or they will collapse and mush over. If there are not enough tamales to fill the steamer, use canning jars to take up the spaces so the tamales don’t fall over.

Turn heat up on the water until it boils. Cover the tamales with a clean kitchen towel and then the lid of the pot. Turn the heat down to medium so that it stays gently boiling, but not raging boiling. Set timer for 2 hours. Check every 20 to 30 minutes or so to make sure the water is not boiling dry, and add boiling water as necessary. Make sure the tamales are above the water line and that the bottoms are not siting in water at all.

Steaming tamales

Tamales will need to steam for 2 hours or more. After 2 hours we can test for doneness. Remove one tamale and check if the masa holds together and slips easily off the husk. If so, it is done, if not it needs to steam some more. Check again in 15 minutes when I check the water level.

When a batch of tamales is done they can be eaten right away, or wrapped in foil (1 dozen at a time) and refrigerated or frozen for later.

Divide the wrapped dozens of tamales among the guests. There should be about 1-2 dozen per guest.

You will want to eat some at the party!!!! There are lots of ways to eat tamales. Some like them topped with just a little of the red sauce, which you can make another batch of while the tamales are steaming. I like mine all different ways. Straight out of the steamer and burning my fingers and tongue as I shove them into my mouth, or if I have all the toppings on hand for Tortilla Soup or Carnitas tacos, I like all of those (minus the tortilla strips) on top of my tamales. I also like them with salsa verde, chopped onions, cilantro, and jalapenos, and a little dallop of sour cream (as pictured below). And I also like them loaded up with red sauce, pepper-jack cheese, black olives, corn and black bean salsa, shredded lettuce and pico de gallo. There is just about no wrong way to eat a tamale.

I’m pretty sure all my Mexican friends reading this are laughing at my gringo-ness; all having hosted and attended a hundred Tamaladas, so hopefully one of you will take pity on me and invite me to your next one, to show me how it’s done! My hat’s off to whoever invented tamales, for passing on this wonderful food, and to my friends south of the border for keeping going this fun tradition. Feliz Navidad!

I did this as a Christmas craft with the students at my granddaughter’s school (pre-K through 8th grade).  We had all just recently experienced snow in our town, a RARE and exciting event in south Texas, so this craft commemorated that very memorable event with a little keepsake.  I also wrote a poem to go with our keepsake craft, so they could be kept forever in a memory book, if anyone wanted.

Originally featured in my book, Come for Supper, the memoirs of a reluctant hostess, this is one of my very favorite meals. Not because it is top shelf gourmet, for in fact it is probably closer to just being sustenance on that scale; mostly made with government commodities, or what can be scavenged in the wild, using few and extremely inexpensive ingredients. Not to say these aren’t all very yummy dishes though, don’t be scared, just probably not cheffy food, if that’s what you were looking for. The beauty of this meal for me is in savoring the foods of another people. Cultural differences can sometimes separate us, but I am enchanted by the brotherhood of the table and the fellowship of food. Eating modest foods also makes me very thankful for the things that I have, and the extravagant meals I have been blessed to enjoy. In a world where some have the luxury of living-to-eat, this is a great reminder that many many people on this planet eat-to-live, and even with the little that they have, are incredibly generous.

I am drawn to and have a deep affection for the American Indians. I think we all do. Most of us played cowboys and Indians when we were kids. Many of our grandparents told tall tales about having native blood in our lineage. It is the raw deal, and unfair treatment of our native people by our government, that gives us (me, at least) a huge mistrust of the federal government. And although they’ve been tucked away, they have never been forgotten. We admire their courage and bravery, so much so that many of our sports teams have been given names like, “Chiefs” “Braves” “Redskins” and “Indians.”  Many towns (and counties) in my native state have Indian names: Sundance, Shoshoni, Meeteetse, Ten Sleep, Crowheart, Chugwater, Arapahoe, Wapiti, Cheyenne, Osage, etc.  Movies like Dances With Wolves, Son of the Morning, and Windtalkers reinforce the love affair. Even so, how many of us truly know our native brethren? Or, know anything about what their life is like today (myself included)? Most likely the closest we ever come is visiting a local gambling casino, or reading about some misfortune in the newspaper. By bringing us to a table to celebrate some of their best dishes, I hope to change that a little. This is an interesting article that I really wanted to save for myself, and share with you, as we consider honoring these interesting people with a Native fall feast for our family and friends.

Ingredients

1 lb Commodity flour (about 3 cups of all-purpose flour)

Powdered milk and water to equal about 2/3 cup liquid

1 Tbsp Vegetable shortening

1 tsp Baking soda

1 tsp Salt

Directions:

Mix all ingredients except powdered milk together. Add milk to other ingredients to form a dough and beat it up. If the dough is too sticky to roll out, add a little more flour. Roll it very thin on a flour dusted cutting surface, cut it into pieces with a pizza cutter, lay the pieces on a parchment lined cookie sheet, prick each piece with a fork, and bake it quickly in a 350 degree oven until toasted golden. Try these crackers the traditional way first, but the next time you make them you might wish to substitute fresh whole milk for the powdered milk, 2 Tbsp butter for the shortening and a splash of olive oil, and perhaps sprinkle the dough with a mixture of seeds, or some parmesan cheese, or some finely chopped italian herbs before cutting and baking. These are also nice served with an assortment of cheeses.

3 sisters

THREE SISTERS SOUP (the 3 sisters are beans, corn, and squash)

Ingredients

1 lb beef stew meat

8 cups water

3 spring onions with tops

1 tsp minced garlic

1 can kidney beans and liquid

Half gallon size bag of fresh green beans, sliced (may substitute frozen or canned)

3 ears fresh corn (may substitute frozen or canned)

3 summer squash, cubed

½ tsp oregano (or 3 mint leaves)

2 tsp salt

5 lg squash blossoms

Black Pepper

Directions:

Cook the stew meat in water until tender. Cut corn from cob, chop spring onions, and add all vegetables to water and simmer until tender. Add seasonings, and squash blossoms; simmer 15 minutes. (For vegetarian version omit meat).

This is a mostly authentic recipe, and doesn’t have much flavor, especially if canned vegetables are used, which are most likely. The next time you make it you will want to use beef broth in place of the water, and leftover beef roast, pulled apart. I always prefer fresh vegetables. I also added 1 packet of beef gravy mix and 1 packet of Lipton Onion Soup Mix to my pot. I also added a small can of Rotel Tomatoes, 1 large potato diced, 1 large carrot chopped, a handful of frozen peas, 2 tsp. minced garlic, to the other vegetables, and about a ¼ tsp. of Cayenne powder. Salt and pepper to taste. Delish!

WILD GREENS AND FLOWERS SALAD

Serves 4 to 6

Salads were much liked in the spring when new, tender greens appeared. A great variety of mixtures was used. Since salt was uncommon or not used at all, salads were flavored by herbs, oil pressed from seeds, and especially with vinegar made from fermented, evaporated, uncooked maple sap (which we can’t make or get). So this is an approximation of the spring tonic salads beloved by all woodland people after the long winters.

Ingredients

1 cup watercress leaves and (only) tender stems

1 cup lamb’s ears, quarter new leaves (or use small spinach leaves)

1 cup arugula lettuce torn (not cut) to bite-size pieces;

can also use Bibb or less expensive leafy (not iceberg) lettuces

1 cup Dandelion leaves

1/2 cup tender nasturtium and violet leaves torn up

1/2 cup nasturtium and violet flowers (in season)

1 Tbsp honey

1/4 cup cider vinegar

1/3 cup salad oil

As much tender mint leaves as you like in the salad

2 tsp fresh mint chopped fine and bruised

2 tsp chopped tarragon (fresh) or 1 tsp dried if necessary

optional: salt and pepper to taste

Directions:

Combine honey and vinegar, whisk in oil and crushed mint. Season to taste with small amount of salt. Pour over greens and flowers in large bowl, and toss for about 3 minutes to coat everything with dressing. Serve immediately.

If you cannot find the greens and flowers listed, you can use a “spring mix” salad from the produce department and add to that whatever edible flowers and greens that you can find, perhaps look at your local garden center, nursery, or fresh herb store.

Native Supper

SQUASH OR PUMPKIN BLOSSOM FRITTERS (Pueblo style)

serves 4 – 6

Ingredients

2 dozen large squash blossoms

(4 dozen of the smaller pumpkin blossoms)

4 eggs

1/2 cup milk

1 tsp chili powder

1 tsp salt

1/4 tsp cumin powder

2 – 3 cups finely ground cornmeal (masa harina)

Oil for deep frying

Directions:

If you’re a gardener or truck farmer, you can make this dish easy; otherwise you’ll need to visit with a farmer at a Farmer’s Market about getting some blossoms. During the growing season farmers thin the blossoms of their vines, because the vine can’t support but only a couple of pumpkins or a few squash. At season’s end there will be an abundance of flowers, as the fruit will not have time to finish before winter.

Rinse and pat blossoms dry. In a shallow bowl, beat eggs with milk, chili, salt, and cumin. Dip blossoms in egg mix, and then roll gentle in cornmeal. Refrigerate for at least 10 minutes to set coating. Heat 2 inches of oil in a deep saucepan to about 375°, hot but not smoking. Fry blossoms a few at a time until golden, drain on paper towels. Keep warm in 250° oven until ready to serve.

Only in the southwest are the blossoms of squash and pumpkin important as a religious symbol, as well as food. They appear as sacred symbols in many Pueblo ceremonies, and gave rise to a popular design worked in silver.

38016ada1e3f4e7fc10fa388363291ce-american-dolls-american-artThere is a Hopi Squash Kachina (Patung). He is Chief Kachina (wuya) for the Hopi Pumpkin Clan. He runs with men of a village in spring ceremonial dances to attract rain clouds.

The Hopis and Pueblo farmers gather large quantities of squash and pumpkin flowers at the end of the growing season, when these flowers cannot make fruit; that’s the time white farmers harvest their curcurbitae and pull up or plow under the still-flowering vines.

STUFFED SQUASH BLOSSOMS

Ingredients

2 doz. squash blossoms

Filling:

8 oz. block cream cheese

1 cup shredded Monterey Jack Cheese

1 Tbsp chopped green onion

Batter:

1½ c. flour

½ tsp salt

¾ to 1 cup dry white wine

cooking oil for frying

Directions:

The authentic way is not to stuff the blossoms, but simply to batter and fry them, or just fry them naked in melted shortening. This is a recipe I stumbled across recently and enjoyed. Pick large squash blossoms in early morning just before they open. (I used my garden zucchini blossoms that had opened already and they turned out okay). Heat 1-2” oil in heavy Dutch oven. Meanwhile, stuff blossoms with a tablespoon of filling. Smooth peddles over filling, and make batter. When oil is ready (pops and crackles when a drop of water is added), drop each blossom into batter, turning to coat evenly, and then immediately into hot oil. Turn while frying to cook evenly on all sides, and remove with a slotted spoon when they have turned golden-brown. Drain on paper towels, and serve hot as an accompaniment for soup. Or, they also make a great appetizer with a spicy marinara sauce to dip them in.

FRYBREAD

This recipe makes 8-10 small ones or 5 big flat ones

Ingredients

2 cups flour

3 tsp baking powder

1 tsp salt

1 cup milk

Deep hot fat in fry pan or fryer

Directions:

Sift dry ingredients. Lightly stir in milk. Add more flour as necessary to make a dough you can handle. Kneed and work the dough on a floured board with floured hands until smooth. Pinch off fist-sized lumps and shape into slightly twisted ropes — everyone has their own characteristic shapes.(Shape affects the taste, by the way because of how it fries). For Indian tacos, shape dough into a rather flat disk shape, with a depression — almost a hole — in the center of both sides. Make it that way if the fry bread is going to have some sauce over it. Smaller, round ones are made to put on a plate. Fry in deep fat (about 375°) until golden and done on both sides, about 5 minutes. Drain on absorbent paper. (My grandmother made what she called, “Squaw Bread” at least once a month when I was growing up. Her’s was made from regular yeast dough. It was one of my favorite things on earth!!!!)

MODERN WOJAPE

Wojape (Wo-zha-pee), a pudding, a dessert. Wojape is traditional to the Sioux and other Northern Plains Nations and predates most of us living now. This is a berry pudding to eat with fry bread. It was made with fresh wild berries collected during that season and also dried berries, preserved for use through the winter. The berries were mixed with sugar when it became available, and also flour for thickener. Today is a different time and Wojape, like many other things, has adapted to the easy access of ingredients. However, it is just as delicious. It can be eaten after a meal as a dessert or as many “out there” know, as a main course maybe with a hot cup of coffee. She calls it modern because of using any kind of frozen berries, “We moderns often use government commodities gallon cans.” This recipe makes enough for about 20-30 people who have 1-2 fry breads.

Ingredients

1 Bag (5 lb) frozen berries (blueberry, raspberry, cherry or a mix)

8 cup Water

2 cup Sugar

Cornstarch or Arrowroot

Directions:

To a 5 quart pot (enamel or stainless steel) add all the berries and smash them with a potato masher. (If you are fortunate enough to have a food processor this would work fine also. However, stop just short of puree, you want fine pieces throughout.) To the smashed berries add the water and sugar. Boil (lightly) this mixture (Approximately 15 to 20 minutes) until everything is cooked. Thicken to desired thickness with cornstarch that has been dissolved in cold water. Serve warm and eat with Indian Fry Bread. Dip the bread into the Wojape and eat in this manner.

Wojape is also outstanding on French Toast, Pancakes, plain Cheesecake, over ice cream, and is excellent served over Angel Food Cake with a dallop of whipped cream.

INDIAN FRYBREAD TACOS

6 servings

Frybread tacos are very much like the Elephant Ear tacos that we used to get at the carnival when the rodeo was in town.  Very easy and one of my favorite things to eat.  If I have leftover homemade chili I use it in place of the meat recipe here.  And when I can’t find Anasazi beans, and I’m in a hurry, I just substitute canned pintos.

Ingredients

6 pieces Indian Frybread — about 6” in diameter

1 lb hamburger

1 large onion minced

2 small cans tomato paste

1 big can tomatoes

1/2 tsp oregano

1 Tbsp chile powder

salt, pepper to taste

Fry onion and hamburger broken up loose. Sprinkle some salt and chile powder over it. Add tomato paste and 4 cans of water and the canned tomatoes and their juice — break up tomatoes and stir it around. Add basil and oregano. Taste for seasoning. If you want, you can use a taco seasoning packet in place of seasonings, and a mild tomato salsa in place of tomato paste and tomatoes. Simmer till meat and onions are done and sauce is thick, 30 – 40 minutes.

Toppings:

1/2 lb cheese grated coarse

1 1/2 c Dried anasazi beans, cooked

1 1/2 c Mache or arugula, washed & stemmed  (I’ve often substituted Cilantro, chopped)

1 lg Red ripe tomato, sliced

2 ea Ripe avocados, halved & sliced

1 ea Red onion, thinly sliced

1 ea Bunch red radishes, sliced

24 ea Golden yellow plum tomatoes halved

6 ea Green Anaheim (New Mexico) chiles, prepared (I’ve sometimes substituted Poblanos when Anaheims are out of season or unavailable)

1 lg Red bell pepper

Directions:

To prepare the anasazi beans, soak overnight in water to cover. The next day, drain the beans and place them in a saucepan with fresh water to cover. Bring to a boil, reduce the heat, and let the beans simmer until the skins break, about 3 hours. It may be necessary to add water as the beans cook to prevent them from burning and sticking. After the beans are cooked, remove from the heat and set aside. You should have about 3 cups cooked beans. While the beans are cooking, roast, seed, and de-vein the chiles and the bell pepper. Leave chiles whole; slice pepper lengthwise into six strips.

To Assemble the tacos, place a layer of meat mixture, cheese, and 1/2 cup cooked beans on each piece of frybread. Add 1/4 cup greens per taco, followed by a red tomato slice. Add slices avocado and 1 thin slice red onion, separated into rings. Follow with radishes and 4 golden yellow plum tomatoes per taco, and top with 1 roasted green chile and 2 slices roasted red pepper. You can vary the toppings and the order in which the taco is built, and for a vegetarian version omit the meat sauce and cheese.

You may also wish to offer Sour Cream (I like the Mexican Crema) and salsa (favorite jarred, or refrigerated varieties).

NAPOLIAS (Cactus)

Ingredients

1 servings

1 lb Pork

2 Cloves garlic, minced

1 lg Onion, diced

3 c Water

2 can (8 oz) tomato sauce

1 can (6 oz) tomato paste

1 lg can stewed tomatoes

1 lb Green cactus, peeled & diced

Salt

Pepper

1/4 t. Cumin

Seasoning salt

Directions:

Cube the pork; fry in a skillet with onion and garlic. In a large Dutch oven, add all ingredients, salt and pepper to taste and 1/4 tsp. cumin and seasoned salt. Cook until meat is tender. You might like to season this with an assortment of dried ground up chili peppers, like New Mexico red chilies, green chilies, chipotle chilies, and little chili pequine, to make it like a Chili Colorado. Very good with corn cakes, or the pinion squash bread featured below!

Cactus (fresh, small, thick pads): Remove spines with knife and peel, or purchase at market in a jar, diced and packed in its own juices. You can usually find it at Mexican markets; the cactus referred to is generally prickly-pear cactus. The juice from the prickly pear cactus is also useful in Native American craftwork, specifically painting with earth paints.

PUEBLO PUMPKIN/SQUASH PIÑON NUT SWEETBREAD

Makes One loaf, serves 6 – 8

Rio Grande Pueblo peoples traditionally served a variant of this sweetbread to parties of nut-pickers in September when piñon nuts were being picked from the mountain slope trees. Families would (and some still do) camp for many weeks in traditional areas reserved to clans. In the recipe you can use either cooking-type pumpkin (these have necks and thick, meaty bodies, not like jack o’ lantern pumpkins) or a sweet bright orange squash, like butternut.

Ingredients

1 1/2 cups unbleached flour

1 cup finely mashed or pureed pumpkin/squash

3/4 cup brown sugar

1/2 cup melted butter (1 stick)

2 eggs beaten foamy

1 tsp baking powder

1 tsp cinnamon

1 tsp grated nutmeg

1/2 tsp salt

3/4 cup pine nuts

Directions:

Preheat oven to 350. In a mixing bowl, combine flour, salt, baking powder, sugar, spices. Stir in pumpkin, eggs, butter. Stir pine nuts into thick batter. Scrape into a greased 6 x 9 loaf pan. Bake for 1 hour or until knife inserted in bread comes out clean.

This sweetish, spicy bread goes well with soups, stews, and can also be a dessert, especially if you cut it apart and put yogurt or applesauce over it.

OR, this is a sweeter, less cinnamony version that lets the pumpkin shine through…

PUMPKIN PINE-NUT BREAD

Makes 2 loaves

Ingredients

2 c Flour

1/2 c Oil

3 Eggs, beaten

1 1/2 c Sugar

1 teaspoons Baking soda

1 teaspoons Vanilla

3/4 c Milk

2 c Cooked pumpkin

1/2 tsp Salt

1 1/2 c Pine nuts, roasted

Directions:

Heat oven to 350 degrees. Mix dry ingredients in a large bowl. In a medium size bowl, mix eggs, milk, oil and vanilla. Mix well, then add pumpkin. Mix well and folk into dry ingredients. Add pine nuts. Pour batter into 2 greased 5×9-inch loaf pans and bake for 45 minutes.

The pine nuts generally taste better if, before they’re added to the mix, you put them on an ungreased cookie sheet in the oven for about 10 minutes at about 350-400 degrees. It roasts them a little. But watch them carefully to make sure they don’t burn.

MAPLE-PUMPKIN CHEESECAKE

Ingredients

1 Graham cracker crust in 8″ spring form pie pan

1 lb low-fat cottage cheese

1/2 cup plain low-fat yogurt

3/4 cup pumpkin puree (or 1 can)

1/4 cup flour

3 eggs

1 tsp vanilla

1/4 cup maple syrup

1/2 tsp pumpkin pie spice

Directions:

Preheat oven to 325°. Put all ingredients into blender, a little at a time, alternating wet and dry. Process until smooth, then pour into crust and spread evenly. Bake for about 50 minutes. Let cool before serving. May be topped with yogurt, flavored with 2 Tbsp maple syrup. Take it up a notch drizzled over with caramel sauce, and sprinkled with chopped pecans.

A    TASTE     OF     CULTURE…

If you have kiddos, you can make this supper a lot of fun for them. This is also a great get-together for church, or a Senior Center, or a classroom if you are a teacher, or homeschooler? Below are the cornucopia of ideas I’ve collected over the years for either a dinner party, or you can use them as activities during a weekend or weeklong festival.

Host a Pow-Wow: American Indians, at least those I am familiar with (Northern Arapaho, Eastern Shoshoni, Lakota Sioux, and Utah Navajo ) have an annual party called a Pow-Wow. They set up teepees, do dances, trade and sell craft items, share food, pray, play games, pass the peace pipe, and tell stories. Thermopolis Wyoming is home to the annual Pow-wow of the Windriver tribes, the Gift of the Waters Pageant, and they tell the history/stories of the giving of the healing waters (see clip on Facebook).

Here’s a fun idea: ask your guests to bring “trade items” (things they have outgrown, don’t use, or don’t want any more) to trade with each other. All unwanted items can be donated to a local charity thrift store after the get-together.

Natives of different groups have their own special ways to play the Hoop and Pole game, but in all the games a person tosses a long dart of some kind at a circular hoop. In this version of the game the hoop is rolled along the ground, set into motion by a third player, while the two other playershoopandpolegamepg18s throw their pole as the hoop rolls in front of them. The score depends on how or if the pole falls on or through the hoop. Netted hoops are made by the Arapaho of Wyoming and other tribes.

Navajo tribes play a stick and dice game, and also a shoe game. Google them to see how they are played.

The Sun Dance, usually conducted once a year, is a custom of the Arapaho people. The Sun Dance is a sort of prayer ceremony. See more about it here.

PEACE PIPE

As the sun sets, gather everyone around to sit “Indian style” in a circle in the center of the yard around a fire pit. Pass around a “peace pipe” with imaginary tobacco in it and let everyone take a puff. This ritual in Arapaho belief is supposed to bond friendships. Encourage the oldest men of the group to pass on some of their wisdom to the younger by telling interesting stories of their boyhood, what games they played, things they did with their parents, faith experiences, etc. Some can share lessons they learned from mistakes they made. Maybe dad or grandpa or Uncle Jerry has a “vision” for the family (or church, or group) or a weird dream that they had that they would like to share.

Are you looking for a clever way to close out the school year for your little group of elementary students?  Are you on a tight budget, or have very few amusement options available in your town.  NO WORRIES.  Us too!!!  Hopefully your town at least has a city park that’s kept nice, mowed and watered, or a nice, large, grassy area with lots of shade trees?  That’s all that’s needed for this shindig.

I was thinking it would be fun to do some olympic type games that gave a nod to things the kids could toss out of their lives for the next few months… like pitching their alarm clocks, tossing their lunchboxes (aren’t gonna need those for a while), and flinging their crayons at a new target –  grass, lazy days, and sunshine, because they’ve leaped over their studies, and run their water bottle relays with rewarded success!

I printed out sheets of the torches, wrote the kids’ names on them, had them laminated, and then punched a hole at the top to string a ribbon through.  On the back I printed the list of events so I could mark winners with a red sharpie, or completed with a blue sharpie.

The kids began their afternoon of fun by first having lunch delivered to them at the school (from Wendy’s, courtesy of one of the awesome parents), and after each of them had used the bathroom, they “began carrying their torches” on their little journey from the school to the park (about a 3 block walk with their teacher).  When they arrived at the entrance to the park, this is the first thing they saw:

They presented their TORCHES, and then positioned behind the sign to pose for pictures.  We were blessed that a very talented member of the school staff, also teacher, also photographer, and also composer of the school’s yearbook, was there to take some wonderful pictures, which she made into a full two pages of the yearbook.  And one day I will scan and post them here, if she gives me permission.

The first game in our line up was the…

Lunchbox “Hammer” Throw

(The kids aren’t gonna need a lunchbox for a few months.  Hip hip hooray, let’s toss it away!)

First I demonstrated to the kids what they would be doing in this game.  I grabbed the lunchbox by the handles, put my left arm straight out, twirled in a counter-clockwise circle a couple of times, and then when I was facing the field, let go of the lunchbox and let it fly as far away as it would go.  After the demo I handed the first kid the lunchbox and let them try.  The kids lined up behind the starting line and took turns twirling and tossing the soft-sided lunchbox out into the field.  (P.S. I had placed a small bag of pinto beans inside to give it some weight).  The child with the farthest distance after three tosses was declared the winner!

Supplies needed: Sign, lunchbox, a couple of orange cones, a jump rope, and something to mark the farthest distance.

Crayola Archery

After I attempted to demonstrate this game, we decided to turn it into a Crayola Javelin Throw, since our cheapo “dollar store” bow kept breaking.  The darn string kept popping out of its slot (Update: wind a rubber band tightly around the tip ends of the bow to keep the string in place. This works like a charm).  Anyway, after a bit of frustration from the darn bow popping apart every time we used it, we just decided to throw the crayon like a javelin.  The kids each got a turn to stand behind the line (I used a downed limb from one of the trees as the marker for this) and then take a turn hurling their javelins at the three hula hoop targets laid out in the distance.  (You can barely see them in the photo below, but look close.)

This is what the arrows/javelins looked like up close.  I used fat crayons and inserted them into big straws (the ones used for smoothies).  They were a perfect fit, and stayed snuggly attached to each other for the whole event.  At least something stayed to together!

You are looking at the fencing arena.  Ours was marked by 4 trees as boundaries.  After demonstrating to the students what they would be doing, the students lined up behind the sign and two pairs at a time faced off using the pool noodles as their fencing swords.  (I got the fatest noodles I could find, to make it harder for little hands to hold onto).  With one arm behind their backs they each swung their noodles at their opponent’s noodle, trying to knock it out of their hands, because homework is now out of their hands.  Any body contact or face contact, or stepping outside the boundaries was considered a scratch and the offender was disqualified.  Winners of each duo were collected to the side to compete in round two.  Eventually a final winner was declared.

Alarm Clock Shot Put Throw

(Hey kids, say goodbye to the alarm clock for a few months!!!!  In fact, let’s pitch that obnoxious contraption as far as we can throw it!)

First I demonstrated to the students how this game was played, similar to the hammer throw, and then the students were lined up behind the starting line, and took turns holding the alarm clock under their chins, twirling, and then heaving it as far as they could out into the field.  (Note: I used a cheapy plastic clock from the dollar store.  It broke on the first throw and left kind of a sharp edge that I cautioned the kids to be careful with.  Then the glass also broke.  Fail!  The better choice would have been something made 100% out of non shatterable plastic and no glass).

The child who launched it the farthest distance after all of them had been given three tries was declared the winner.

Supplies needed: Sign, cones and jump rope to mark the starting line, an alarm clock, and something to mark distance.

Three R’s Shooting Competition

The three R’s stood for Reading, wRiting, and aRithmetic, which were featured on the three targets placed at a distance from the starting line.  (Way to target your subjects this year kids)!  The students lined up behind the starting line. They were instructed that one kid at a time would approach the starting line, grab a squirty bottle, aim at the first target, and begin squirting at it, moving in closer until the stream of water touched the first target, then they could move to the next target, and then the last target and do the same. Their time started when the teacher said, “GO” and they began squirting and stopped when they hit the last target.   Each child took their turn.  The kid with the fastest time (after three rounds) was declared the winner.

Water Bottle Relay with Hurdles

(Hey kids, you’re not gonna need those water bottles for a while, AND we can celebrate that you all got over your hurdles of – Language, Art/Music/P.E., and Science this year.  Way to go kids!  You are all champions!!!!)

The kids lined up in two groups behind the starting line.  After demonstrating to the kids how to run the course, I handed each first person in line a water bottle. At the sound of my whistle the two kids with water bottles ran down the course, leaping over the hurdles and down around the cone at the far end of the course, and returning to hand off their water bottle to their next teammate.  The first team to complete the course was declared the winner.

Supplies needed: A sign, three hurdles with words attached that represent school subjects, two water bottles, a start line, an orange cone, and a whistle.

This concluded the structured games.  At this point the kids were given a break to get a drink and snack and rest for a bit. Several of the parents brought coolers full of drinks (bottled water, juice, Gatorade, etc.) and snacks (Cuties oranges, goGurts, popsicles, cookies, carrots, etc.) for the kids to  munch on and stay hydrated with, and they served their treats “Tailgate style” out of the back of their vehicles, parked alongside the park.

For the remainder of the afternoon  the kids participated in free play.  I had set up a Badminton net and blew up a giant beach ball for them to either toss over the net to each other volleyball style, or just kick around the park in a giant game of “keep away.”

In addition I brought a giant soft-sided Frisbee, bottles of bubbles for everyone, a soccer ball, the hula hoops, and gave each child a squirty bottle full of water to also play with.  In addition, one of our awesome parents brought a huge cooler full of water balloons for a hot potato game.

The parents and I chilled out on blankets spread-out under the shade of a grand old oak tree, and visited with each other while the kids tear-butted around having the time of their lives.  I think the kids all had as much fun, if not more, with free play as they did with the games, hey, but a theme is a theme, right?  What a great afternoon and terrific group of kiddos!!!!  I hardly noticed that it was 95 degrees and 50% humidity.  HA!

After a couple of hours of playtime, the parents went around and gathered up the signs and parts of each game and helped pack everything up.  The kids picked up all the trash and bits of broken balloons and then gathered with their teacher to walk back to school.  Before they dismissed to go home each was presented a gift bag, which contained a movie theater pass (that they could use to go see Diary of a Wimpy Kid 2, which just released in theaters the week before), a pass to the local indoor inflatables park, and a gift certificate to Dairy Queen, plus a Nerf ball (which gave me the inspiration for the theme of the bags), so they could all… “Have a BALL this Summer!”  🙂

As a sequel to Easter Traditions … I present Easter Fun and Games!

I always start the Easter celebration the night before. I have my little kiddos come just before dusk and plant “PROMISE SEEDS” all over in my yard. I usually just use jelly beans as the seeds, but this year I found this crazy perfect candy:

I give each kid several little bags of this candy, and as they “plant” it all over my back yard, I tell them the Bible story about how God wants us to sow gospel seeds (tell people about Jesus and the Easter story).  When we do, some of those seeds will fall on rocky soil, some on the wayside, some among thorns and thistles, and some on good soil (Matthew 13:3-8).  We talk about how those soils are heart conditions and how willing people are to hear about Jesus.  If the seed falls on good soil, the Bible says we will reap a harvest. We always have to be careful with our words, because some of our words are life-giving and some kill. If we sow the wind (which would be slander and gossip), the Bible says we shall reap the whirlwind (which is the same wind returning back on us with fury and without mercy). We shall always reap what we sow.

Once they’ve planted their seeds I let them take around a watering can and water each other’s seeds. This is a good object lesson for the scripture that says, “One plants, another waters, but God gives the increase” (1 Corinthians 3:6-8).

The next day when the grandchildren arrive after church, this is what they find:

Their little promise seeds have grown into Easter eggs strewn everywhere.  Eggs are a great object lesson for Easter, because just as little chicks burst forth from their eggs in the spring and leave an empty shell behind, so did Jesus burst forth from the grave, leaving it empty. Eggs are the perfect symbol to demonstrate the resurrection of Christ. (Of course grandma and grandpa transformed those eggs, and we’ll tell them this someday – but isn’t that just like what Jesus does?  He transforms the seeds we sow into new souls for the kingdom).

After the kids have gathered up all the Easter eggs from the yard, we all go inside and sit down to Sunday dinner. The harvested plastic eggs have to sit and wait for us to eat before we get to see what’s in them.  Perhaps that is the way it will be in heaven too? Perhaps we shall feast with our Lord first, and then we will get to go and do stuff?

Just in case you are dying to know …. this is the meal we always eat at Easter (click here: Easter Traditions). I always make plenty so we can pull out leftovers for later in the day.  And I always have snacks, like chips and dip, chicken salad and rolls, a veggie tray, and something sweet.

As our meal sits steaming before us, the grandchildren say the blessing, they also sing it, and it is always precious to behold.

After Dinner … Time for FUN!

Inside each of the plastic eggs are either little slips of paper, pictures, trinkets, puzzle pieces, or other objects, and each is part of a game/activity for the kids and grown-ups to participate in.  It will take up most of the afternoon for the kids to do everything.  

With all of us gathered outside on the patio (a luxury of living in south Texas) we let the youngest child draw out an egg from her basket to open. Whatever her little slip of paper inside instructs her to do, she/we do. And then it is the next kid’s turn to pick an egg from their basket and do what it says to do.  The kids take turns back and forth opening eggs. Sometimes the slips instruct them to do an activity alone, other times it involves all the kids, and often times it involves the whole family.

I-SPY Token Hunt

These slips of paper are actually pictures that I’ve snapped around my house and yard.  The pictures are close ups of things familiar to the children, but not immediately recognizable.  The children have to think about them.  It’s kind of a puzzle for them to figure out.

(The week before Easter I go around with my camera and take close-up shots of various items, kid’s eye level, and then arrange them into an 8 X 10″ collage that I send to Walgreens to have printed.  I then cut the pictures apart and tuck each picture into a plastic egg.)

Once the child figures out what the picture is of, they dash off to find the token that’s hidden in that location.  The child then gets to use that token like Monopoly money, to buy a prize from Grandma’s secret prize bin.  (*My secret prize bin is a big blue tub filled with candy, small toys, small games, cookies, coloring books, story books, stuffed animals, jewelry, hair things, etc.  Mostly things from the Easter isles at the stores).

Resurrection Eggs

These come in a set of twelve plastic colored eggs, with a little story book.  Each egg contains a little trinket inside that corresponds to a part of the Easter story.  They sell these egg sets at Christian stores, and you can find them online.

Whenever one of these eggs is opened, I read aloud the story from the book that corresponds to the trinket.

*This year, just to change things up a bit, I substituted this book for the Resurrection Eggs.  I divided it into three parts and hid three small tree-shapes in three eggs.  Whenever one of these eggs was opened, I read a part of the story.

Binoculars I-Spy

The kids love to play with grandma’s binoculars, so last year I made this game knowing they would have a lot of fun with it.  Inside four eggs were tiny plastic binoculars and a sticker of an object (dove, cross, empty tomb, Jesus fish). When a child got one of these, they had to use grandma’s binoculars to find the match for that object somewhere in the far reaches of the yard.  I had the large-sized matching objects tacked up around the yard – a cardboard dove was tacked to a tree trunk in the far end of the yard, a Jesus cross was pinned to the fence on the far other end of the yard, a tomb cut-out was sitting on top of a big stone I have around in my front yard, and a Jesus fish was dangling from a fishing pole down by the river. If they were having a tough time finding an item I gave them a hint: Where would you find a bird? Where would you find a fish? What was rolled away from the tomb? What was the cross made out of? They had so much fun with this. Once the child spotted the object, they had to run and get it. On the backside of each was a little message that told them what their special prize was for finding it.  Two of them had coupons for lunch with granny at their school that week, and the other two had coupons for an ice cream treat to keep or give away.

This year I substituted this game for the following Pencil Puzzle Secret Code game.

Depending upon the ages of your children these can be easy to hard secret codes, word searches, Jr. Jumble, connect the dots, etc. I printed mine out on 8 1/2 X 11″ copy paper, folded the sheets in half and in half again, and then tucked them inside objects that I hid in the yard (an old hat, a tattered glove, a disposable drinking cup, and taped to the bottom of one of my bird feeders).  Four of the plastic eggs had slips of paper that directed the children to look for these objects (hat, glove, cup, and bird feeder).

The secret code puzzles that I cam up with were perfect for my 2nd grade granddaughter to figure out on her own, and when her Kindergarten sister got one, she helped her do it.

The solved puzzles led them to special surprises hidden in four different locations.  In each location I had a wrapped gift for each child (new swimsuits, new bedtime story book, giant activity books, and a stuffed animal each.

Last year I made two, four-piece puzzles, and placed the eight pieces in the eggs. When a child opened one of these eggs, they set the pieces aside until they found all of them, and then when all the pieces were found, they taped the pieces together to complete a picture. On the other side of the picture was a clue about the picture and what might be hidden there. (For example, one puzzle was a photograph of the rear tire of my automobile, and the clue on the back of the completed puzzle told the kids they were looking for a key for a lock in that location. Sure enough hidden behind the tire of my car was a box, with a key inside. When they wondered what the key was for, I told them the other puzzle held that clue, and indeed the other puzzle when put together showed a treasure chest at the base of a tree. The kids had to hunt to find the tree with the treasure chest, and then use the key to undo the lock to find out what was inside.

The kids also LOVE grandma’s I-pad.  They call it “my app thing.”  I have some kid’s Bible apps downloaded onto it, Netflix, and some educational games.  Inside some of the plastic eggs were slips of paper that directed the kids to use the tablet camera to take pictures of specific things. For example one slip asked them to take a picture of grandma and grandpa kissing one of the children on the cheeks.  Another slip asked the child to take a picture of mom and dad making silly faces at each other. Another asked the child to take a picture of all the grownups blowing bubbles.  Other photo poses included: trying to do the splits in the yard, making grass angels, showing our muscles, jumping really high all at once, taking a close up of someone’s eye, and so on.  These pictures are treasured keepsakes of our day, and the girls love to look through them when they come stay the night.

Silly Dares

These slips of paper instructed the kids, or often times the whole group, to do some silly task, like doing six somersaults in the yard, or patting our heads and rubbing our tummies at the same time, or breaking a confetti egg on someone’s head, or eating a cracker and trying to whistle, or singing a song in a circle with each person singing just one word of it – we did Jesus Loves Me one year, and Mary Had a Little Lamb another. Some of the other silly tasks were: doing a one-minute crazy dance in the yard, running around to the front to wave at a car passing by on the road, have a water spraying contest, having a rolling race with sister in the yard, laughing as loud as we could for 30 seconds and then all stopping suddenly, snapping our fingers as fast as we could, and so on.

Minute to Win It Games

In four of the plastic eggs were slips of paper that simply said, “Cookie Face,” “Penny Stack,” “Suck it Up,” and “Nut Stacker.”  When a child got one of these we all participated.  There were no prizes for these, except for the good feeling of winning. They each had to be done in under a minute.

Cookie Face: each contestant is given a cookie, which they place on their forehead, and then must move to their mouth using only their facial muscles – no hands!

Penny Stack: must stack 25 pennies, one at a time, on top of each other using only one hand.

Suck It Up: Use a smoothie straw to suck up transfer 25 Skittles from one paper plate to another.  The paper plates are side by side.

Nut Stacker: place 5 nuts onto a wooden skewer, and slip the nuts off the skewer one at a time into a stack without touching them

Other Games

I also had a couple of other competition games.  One was “Cup Shoot.”  The kid that drew that egg picked someone to go against them.  I had disposable drinking cups on strings between trees, and at the sound of the whistle they had to use a squirty bottle to move the cups along the strings from the start to the finish.  Whoever won got to choose a new opponent and compete.  We played until everyone was ready to quit.

Another game was to use smoothie straws to putt marshmallows across the lawn from a starting point to a finishing line.  Of course, the lowest putts won.

And another game was to use one foot with a pencil between toes to draw an outline of the other foot on paper.  To make it even more fun have partners face each other and draw each other’s foot with their foot.

Other game options to add next year:  Rodeo games: broom pole bending, rake barrels, shovel bucking bronc… Dart throwing, around the world basketball, bean bag toss, ladder ball, tire run, hula hoop contest, could even to make an obstable course of several of these.

Below are the pictures I took for the Guess the Picture game 2017. They are of objects around my house, so of course they wont work for you, but I thought you might like to see them to give you ideas of what you could photograph around your house. Some, you’ll notice, were indoors, some were outdoors, and some were in my garage.  I got the page of them printed at Walgreens for sharp, clear, best quality.

GREAT IDEA:  My neighbor shared with me a neat idea of something she did with her boys when they were young.  She gave them each a basket of eggs.  The eggs had slips of paper inside each that gave them chores to do (they lived in the country on a farm).  When the boys went to do their chores, they found she had hidden little surprises for them at each place.

Movie Time!

After we were all done with the plastic eggs and all those little activities, we refilled our beverages and the kids had their choice of either doing crafts or watching a movie. They opted for the movie, which was nice. It gave us grown-ups a chance to relax for a bit. Let me clean up the kitchen and get a beverage. The movie choice for the kids was Lion of Judah animated movie (I’ve included the trailer below, in case you’ve never seen it).

It was my son-in-law’s childhood tradition to watch Charlton Heston’s Moses – The Ten Commandments every year at Easter, and since it is always on the TV at Easter, I think it’s a great choice!  Of course there are others, like, The Passion of the Christ, Son of God, and Ben Hur.

Crafts

Marshmallows & Toothpicks: After our movie last year, I dumped a big bag of colored miniature marshmallows and a box of toothpicks out on the dining room table and just let the kids create whatever they wanted. We made crosses, and houses, and weird little hooked together things. Ha! We got more snacks and beverages, and this kept us entertained for a good long time.  This is also a great craft for large school groups.

Decorating Eggs: We pushed the marshmallows aside and pulled out the eggs. Wal-Mart had faux eggs in their Easter section that were perfect for decorating. They were white and felt just like real eggs, without being real. They even sold them by the dozen in paper egg cartons. All the egg decorating kits worked perfectly on them, and colored Sharpie markers are an awesome, non-messy alternative.

 

Nail Cross Necklaces: This craft was a little too difficult for the little kids to do by themselves, but their mother and I helped, and we had a lot of fun with it. Using regular construction nails and thin colored jute, we made “God’s Eye” crosses, and then attached a long string for a decoration to hang in the window or on a wall.

DSCN9607Summer’s comin’! Are you ready?  This was another bulletin board I dreamed up for my grandkid’s school.

So many of the parents shared that they loved it and took photos of the board to help them out this summer.  Many shared that they also came up with other ideas to add to each theme.  I recieved so many comments that I thought maybe I was on to something by sharing it here. Maybe it would inspire you as well!

Honestly, I don’t know about you, but when I was a young mom, the month of May was a complete whirlwind, a blur, sooooo crazy busy with end of the school year activities, and after-school clubs and lessons and sports events winding down and gearing up, recitals, and graduations, and a yard that was totally out of control, that I didn’t know if I was coming or going, let alone think about summer.  And then, BAM, here it would be, like a brick wall on the 1604!  Instead of getting to sleep-in though, and be lazy that first wonderful morning, my eyeballs were dredged open and I was jarred out of delicious unconsciousness by a bedroom full of bouncing, wide awake kiddos huddled around my tossled bed, begging for breakfast, and quizzing me on what we were going to do that day.  Whoa!  Time-out kids!  You gotta let mama sit with a cup of coffee for about thirty minutes before you start in on me with the needy kid stuff, c’mon!  Eventually we’d get into a new routine of sleeping in, being lazy, being bored, bickering and squabbling, and spending entirely too much time vegging on the couch in front of a television – a rut that’s hard to break out of.

Soooo… for all our sanity, I’ve come up with a plan, and we’ll see how long it lasts.  I’ve divided the summer into the individual weekdays.  Figuring on about twelve Mondays, and twelve Tuesdays, and twelve Wednesdays…. etc.  I came up with themes for each day (for variety), and then at least twelve activities for each day that we can check off the list.

Monday’s theme is CHORES, with age-appropriate jobs for the kids to do, which I hope will kind of earn the kids the fun being offered the rest of the week.  In fact, you could pay your kids for their chores with play money and then charge them for the activities later on.  Even fine them for whining, if necessary, but I’ll bet they’ll like having chores to do.  I know my grandkids love helping with things.  It makes them feel grown up.

Tuesday is a physical and outdoorsy theme, to keep the kids active.

Check out this fun backyard Ninja Warrior Course a dad created for his daughter. There are lots of other plans on the Internet and on Pinterest.

Neighborhood KIDS (Bicycle/Tricycle/HotWheels) “Poker” Run:

1. Get your kids’ friends, and their moms, together for a neighborhood kid’s poker run. Need seven moms, and at least seven kids on bikes, tricycles, or Hot Wheels. Could even do roller blades, scooters, or skateboards.  Each of the seven moms will be in charge of a card station (preferably right outside of their house – provided all the moms live in fairly close proximity to one another), and have beverages and snacks on hand for the kids.  Each of the kids will need to bring a good, nice toy or item that they don’t want any more as their payment to play.  All the toys/items will be collected into a prize basket.

2. Plot a course. Draw a map of your neighborhood, and show the boundary lines for the Poker Run and where the stations are. Pre-arrange for seven stations where the kids will collect cards from.  A mom will be at each station.  You’ll need a deck of cards (Crazy 8s work great), divided into seven portions, and a portion given to each mom for each station, and a scoring sheet for each kid showing what the order of winning hands are.  (Using Crazy 8s cards, the kids can make sets: several cards of the same number, or runs: several cards of the same color.  Of course a run of 4 cards would be worth more than a run of 3 cards, or, in the case of two kids having a run of 4 cards you can add the totals of the cards to see who’s is highest, and a set of 7s would be worth more than a set of 5s, and if you wanted to get even more technical, or break a tie, you could make purple the most valuable, then blue, then green, then red).

The kids will ride their bikes from point A to point B along the route, and draw a card at each station.  The mom at that station will mark what the kid’s card is on their scoring sheet, offer them something to eat or drink, and send them on their way.

Basic Rules for a real Poker Run: Participants meet at a pre-arranged point, and pick up details of their route and the stops they’ll need to make. Each participant is given a score card which will be filled in as they progress along the route. At each designated stop, the participants draw a card at random (or are dealt a card). The card drawn or dealt is recorded on each participant’s score card, and the winner of the event is the participant who makes the best five card poker hand (out of the seven cards they collected) at the end of the run. Normal Poker Run Events usually end with some entertainment at the designated “last stop” of the route, along with the awarding of the prizes.

There are no prizes for speed – it does not matter who is first to complete the course. It is not a race.

The winning hand is determined by standard poker hand rankings. Decide ahead of time if you will use “wild cards” and if players will be allowed to buy extra cards at any point. Some runs, for example, allow a player to replace one card in their hand by “buying” one more card at the final stop for a fixed fee.

The “last stop” can be your house, where you have a movie set up outside for the kids to watch, or it can be a nearby ice cream truck or store, or it can be a swimming pool, or a skateboard park, or bowling alley, or gaming arcade.  Honestly, any place that kids would find fun.  The kid with the winning poker hand will get first choice from all the toys/items paid to the prize basket.  The next highest winning hand will get second choice, and so on until each kid has chosen a toy/item.   You can sweeten the pot by adding some prizes of your own (i.e. a horn for their bike, a new ball cap, or beach towel, or music CD, etc.).

There are lots of ideas for a Nature Scavenger Hunt (do a Google search, and then pick one).  If you want, its kind of fun to make plaster castings of the hoof impressions and animal tracks that you find.  You might also catch a horny toad, frog, turtle, or lizard that you could bring home and place in a terrarium for a few days.

This is how you play Frisbee Golf.

Progressive Lunch Bike Ride (or Hike)  If you know several moms in the neighborhood, or within close proximity to you and each other, ask them if they would like to get the kids together for a progressive lunch bike ride.  Each mom will host a portion of the meal (drink, sandwich, chips, carrot sticks, apple slices, dessert, etc.).  All the kids will meet at the first house for the first item of their lunch.  Then they will ride their bikes (with that mom) to the next house, for the next part of their lunch.  Both moms and the kids will then ride to the next house for the next portion of their lunch.  This continues until all the moms and all the kids have made it to the last house and eaten all their lunch.  The last house can then host an activity for the kids, like a driveway basketball game, or set up a hot wheels track, or play a backyard game of hide-and-go-seek, or play on a slip-and-slide, Croquet, volleyball or badmitten, or just do some trampoline jumping, etc. When everyone is ready to call it a day, the moms and kids can follow the course backwards to each of their houses.

A Sidewalk Chaulk Art Rally is basically just getting all the neighborhood kids together, asking them to bring their own sidewalk chaulk, giving each kid a section of the sidewalk, and putting them to the task of creating a work of art within a time limit, to be judged (or not) by the neighbors, or parents, or whomever you wish.  Provide drinks and snacks for the kids.  Be sure to take a nice photograph of each finished creation, even video the works in progress, and interview each artist.  Your local newspaper may even be interested in doing a story on your event.  You can host the rally in your neighborhood, cul-de-sac, or neighborhood park.

NOTE: I didn’t put anything on the posters about swimming lessons, or VBS or summer church camps, or summer movies at the local theater, or roller skating at the local rink, or bowling, which the schools usually send fliers home about at the end of the year that offer special prices and promotions.  I also stayed away from costly activities like bouncy house places, trampoline parks, amusement places, laser tag, go carts, mini golf, climbing walls, and all that sort of stuff, but you are certainly welcome to add those on to each day as you wish and can afford.   Have a fun and blessed summer y’all!

It is one of my kids’ very favorite parties I ever threw while they were still living at home. It is also one of the favorites of my cooking club group, who helped me test some of the recipes in the book.    

It’s like an “Asian fondue” party! Everyone cooks their own food — which is a reluctant hostess’s dream party, right?  All you have to do is collect some equipment, do some grocery shopping, do a little slicing, dicing, and chopping, mix up some sauces, set up tables, toss a CD in the player, and decorate.  Voila! (– or however they say it in Chinese).

So now, imagine yourself invited to my house for Chinese

You come knocking on my door and can hear music from the Orient playing faintly, and you can also smell what smells like dinner cooking (in reality it’s just chicken broth and hot peanut oil).  You’re dressed in your best Asian get-up (complete with a coolie douli hat, because that’s what I asked you to in the invitation) and as you ring my doorbell, are excited for me to turn that knob and invite you inside.  When I do, you find me decked out in a green t-shirt with Chinese scribbles across it, my hair tied up with chopsticks, and wearing flip-flop house slippers on my feet.  Inside the house there are paper umbrellas hanging upside down from the ceiling over the lights, and little paper lanterns strung about.  Some little Chinese fans scattered on the tables and around.  Vases of bamboo set around as gifts for guests to take home after the party.

Mongolian Hot Pot Party

Some of my other guests have already arrived and are wearing red silk dresses, tank tops with black leggings, and one is wearing a white Gi, tied with a yellow (beginner’s) belt.  There is laughing and mingling as everyone crowds into the kitchen to pour themselves a drink.  Your options are hot Green, Oolong, or Jasmine tea, Bubble Tea, a shot of sake, or a cold imported Chinese Tsingtao beer.

The music that is playing sounds a little bit like a Chinese version of Manheim Steamroller, so you ask, “What is this playing?” and I answer, “It’s Twelve Girls Band!”  Hmmm…nice choice, right?  My daughter turned me on to them.  

And finally, when everyone has arrived, we take our places around the tables.  There are two.  Each has been set up with a “hot pot” in the center.  The wok at one table is filled with a steaming hot liquid bubbling inside.  On either side are platters of raw ingredients, meats on one side and veggies on the other. At each place setting around the table is a bamboo mat, with a small platter centered on it.  A set of chopsticks lays across it, and each is flanked by several small cups of sauces of various colors.   

At the other table is a wok of hot peanut oil.  The platter to one side is egg roll wrappers, little cups of water, and a bowl of filling , and on the platter on the other side are various raw meats and veggies and a bowl of tempura batter.  The guests sitting at this table get to fry their supper.  Their place settings are the same.

I gather my guests to the tables and ask if we may join hands, as I play an audio version of the Lord’s Prayer being spoken in Chinese (from YouTube) and then we pray the same prayer together in English. 

And with that, I explain to everyone how we’ll select a meat or veggie from the platters using the fondue forks, and then plunge our selections into the hot broth to cook.  After a minute or so we can bring the morsels to our personal platters and spoon on whichever sauce we’d like to try.  After half an hour or so those seated at the broth wok will take their personal platters and trade places with those seated around the hot oil wok to make egg rolls and tempura things.  And then, when everyone has had a chance to try everything, I’ll toss a bunch of noodles into the broth wok and in a few moments serve a small cup of noodle soup to each of my guests.

Of course we all sit around the woks and cook and eat until we are so full we can’t breathe, and that’s when I suggest we leave those tables and gather in the living room for games.  I have several set up to choose from: Go, Mahjongg, and Chinese Checkers (even though I’ve been told Chinese Checkers aren’t really Chinese – although if you turn my game tin over to the underside it says, “Made in China” which is good enough for me.  Of course everyone is welcome to refill their drinks, and those who are up for learning a new game can sit down to it.  Those who know already how to play are encouraged to teach others, and those who are not into new and complicated games can play Chinese Checkers.  We all had a set of those at home when we were kids, right?  Easy.  Only trouble is Chinese Checkers is over in a short time and boring after a while, so for a backup activity I have a Chinese movie all ready to go.  

Although the Chinese do not eat dessert (or take beverages) as part of their meal, they do snack on sweets between meals.  Their sweets traditionally consist of fruit or almond cookies.  So I have a big fruit platter set up in the kitchen with cut up melon, bananas, oranges, apples, strawberries, grapes, berries, and whatever else is in season at the grocery store, along with a platter of crisp Almond cookies, and those yummy rice krispy type treats made with sesame seeds that they serve at my favorite Chinese place on main street, plus a big pile of Fortune Cookies (which also are an American invention, but at least from China Town in San Francisco).  

My sister has this fun little tradition of adding “…in the bathroom” to the end of all Chinese fortune cookie fortunes, which  makes them kind of funny, so I of course suggest we do that.  And everyone reads theirs, and we all laugh, because we’re supposed to.  And it’s a little awkward, so we refill our drinks and grab some dessert, and head out to the family room to play our games or watch the movie.  

What is the movie, you ask?  Well, you have your choice:  I have China Cry for the Christian crowd, who possibly wants to be inspired by a flick about faith, or I have the Karate Kid for all of us who remember that from what, the 80’s?  I have a Bruce Lee flick, and a Jackie Chan.  Or, I also have the Season One episodes of Better Late Than Never, with Henry Winkler, George Foreman, Terry Bradshaw, and William Shatner saved on my DVR for anyone that missed that and wants a good laugh.  (They are probably available on Hulu or Netflix too, and the NBC website).   

(In mybook I also suggested that a host of this particular supper may want to invite some missionaries from their church who have returned from China and would have interesting stories to share, pictures, and treasures that we could touch and pass around.  I also suggested that we could talk as a group about going in on a donation to support a missionary we know, or give a donation to an organization that gives out Bibles in China, or give a money gift to a couple adopting a child from China).

When we’re ready to call it a night, I hand out fireworks (just sparklers and party poppers and the safe backyard varieties) and we all wander out to the front yard to end our night with a BANG! But not too big of a bang because all the neighbors are sleeping.  Shhhhh!   I have little red goodie bags also hanging in the trees and ask everyone to go look for one by flashlight and take with them before they head to their cars.  They have little trinkets from the dollar store in them, a chinese jump rope, some small candies, and a few shiny new quarters – because that’s what I’m told they do in China.  As each guest gathers their things to leave there are kisses and hugs all around. Engines begin starting and lights start flipping on, and one by one the cars drive away.  I stand there and wave, then turn and contentedly wonder back inside my house with a heart full of great memories and a sink full of dishes to wash.  I can’t think of a better way to wreck my kitchen.  

YumYum Chinese

MONGOLIAN HOT POT
You’ll need a platter of meats and a platter of veggies, cut up and ready to cook fondue style.

Meats: Scallops, Shrimp, Chicken breasts (cut into strips), Beef (flatiron steak cut into small strips), Pork (loin, cut in small strips or pieces). Place meats on a platter with partitioned wells (like a serving set for tacos) would be ideal. This way the meats won’t mingle and contaminate each other in their raw state. I cut my meats and wrapped my platter in plastic wrap, and stored in the refrigerator the morning of my dinner. Be sure to clean cutting surfaces with warm, soapy water and Clorox wipes between meats and when finished.

Veggies: Carrot coins, cut on the diagonal and then in half, Celery slices, cut on the diagonal and then in half, Snow peas, Cabbage leaves, Broccoli florets, Green pepper slices, Zucchini-cut on the diagonal and then in half, Mushrooms (straw or shitake), Green onions, cut on the diagonal.

Additional ingredients for the soup: bean sprouts, bamboo shoots, water chestnuts, baby corn, and noodles (I don’t really care for the traditional cellophane noodles, so I substitute Ramen or thin spaghetti), garlic cloves, and a smidgen of honey. I also like spicy Thai peppers and cilantro but not everyone does so ask your guests before you add these to the pot, as they can easily be added to individual bowls of soup instead.

Add chicken broth to a shabu yaki, (or electric wok, or an electric skillet or large fondue pot). Fill to about an inch or two below the rim. Place in the center of the supper table. Be sure to wrap the cord securely down a table leg so no one accidentally trips on it and pulls the hot pot over. Plug into a power source and set the temperature dial at the boiling point (about 215 degrees F).

Hot Pot is like fondue. Guests are seated at the table with plates and samplings of sauces. Each uses chopsticks (or fondue forks), takes meat and veggies from the platters, and cooks in the boiling broth. They bring their cooked morsels to their individual plates and dip in their choice of sauce (recipes below) before eating. Once everyone has tried everything and is near being full, noodles are added to the pot, along with the additional ingredients (mentioned above), and then everyone is served a bowl of soup.

NOTE:  After my supper I wrapped up all my leftovers and the next day made the best stir-fry ever with all the meats and all the veggies, and what was left of the sauces. If you prefer, this would also be a great idea for your Chinese Supper. Instead of making ‘hot pot’ as above, place all of your ingredients out on the table in the same manner, but replace the broth pot with a hot wok and a little peanut oil instead of broth, and let your guests make their own little “stir-fry” concoctions that they cook themselves. Kind of like a self-serve Mongolian Grill at home.

SWEET AND SOUR SAUCE
3 Tablespoons Cornstarch or tapioca starch

1 cup water

2/3 cup rice vinegar

1 1/3 cup sugar

2 Tablespoons Soy Sauce

½ teaspoon of red food coloring

In a saucepan dissolve the cornstarch in the water, add the remaining ingredients. Heat over medium high heat until sauce boils and thickens.

PLUM SAUCE
2 cups plum jam, jelly, or preserves

1 cup applesauce

1 teaspoon ground ginger

4 teaspoons cornstarch

4 teaspoons soy sauce

4 teaspoons wine vinegar

Mix jam and applesauce in saucepan. Bring to boil. Combine ginger, cornstarch, and soy sauce, vinegar. Stir into jam mixture. Cook stirring constantly until mixture thickens. Cool. Refrigerate until serving time. Bring to room temp before serving.

HOT MUSTARD
½ cup dry mustard

4 Tablespoons peanut oil

4 Tablespoons water

½ cup sugar

2 Tablespoons cornstarch

1 teaspoon salt

1 cup water

½ cup white vinegar

Mix mustard and oil in small bowl. Gradually add the 4 Tbsp. of water, stirring constantly to form a smooth paste. Stir together sugar, cornstarch, and salt in saucepan. Gradually add the cup of water and vinegar. Blend thoroughly. Cook over medium heat until mixture thickens. Gradually add to mustard mixture, stirring constantly until blended. Refrigerate until ready to use. Serve at room temp.

TERIYAKI SAUCE
1 cup pineapple juice

½ cup packed light brown sugar

4 Tablespoons soy sauce

2 Tablespoons peanut oil

1 ½ teaspoons ground ginger

½ teaspoon salt

2 cloves garlic, peeled and minced

Mix all ingredients in a saucepan, simmer to blend flavors.

GARLIC GINGER SAUCE
2 Tablespoons ground ginger

2 cloves garlic, peeled and crushed

½ cup water

4 Tablespoons sugar

1 cup soy sauce

Mix all ingredients. Use as a dipping sauce.

DUCK SAUCE
1 small can cling peaches in heavy syrup

¼ teaspoon ground mustard

1 teaspoon grated fresh ginger root

4 teaspoons red wine vinegar

¼ teaspoon Chinese Five Spice

1 teaspoon cornstarch

1 Tablespoon water

Drain pieces and reserve juice for something else. Mash peaches with a fork or potato masher until well crushed. Add mustard, ginger root, vinegar, and Chinese Five Spice. Bring to a boil, turn down heat and simmer for 15 minutes, stirring occasionally to keep from burning. Dissolve cornstarch in water and add to sauce, stirring constantly. Cook for 2 to 3 minutes, continuing to stir, until thickened. Store in refrigerator until ready to use.

Bottled Soy Sauce (try Kikkoman, which is slightly sweet, and La Choy which is more salty)

EGG ROLLS  (this recipe was given to me by my Japanese/American friend, Cyndi)

1 (16-oz) pkg Jimmy Dean regular sausage

Shredded or chopped Napa cabbage (a green cabbage will also work)

½ pkg of bean sprouts (approx. 2 cups)

¾ cup grated carrot

Grate about 2”  of ginger root on top

Mix together by hand.  Lay one egg roll wrapper on work surface and place a heaping spoon of the meat & veggie mixture in the middle.  Fold the wrapper as shown on the packaging.  Get a little water on your fingers and moisten the final corner of the wrapper so that it will stick and seal the roll.  They must be cooked fairly quickly after they are made as the wrappers will become soggy if wrapped up and stored in the fridge for very long.  And they can’t be fried and kept for very long either, as they lose their crunch.  They should be the last thing you put together for your meal, moments before your guests arrive.  Or, let your guests make these themselves, just as with hot pot above.  Have the meat mixture and egg roll wrappers (and small cups of water) ready for each guest to assemble on his or her own. 

Set up an electric wok with enough peanut oil for deep frying (again fastening the cord down a table leg so it isn’t accidentally tripped over).  Oil temperature should be about 360 degrees F. Consult your owner’s manual.  Drop a few egg rolls at a time (not more than 4 or it will cool the oil too much) into hot oil and turn once in a while during frying so they cook evenly, until golden brown.  Lay on the rack or drain on paper towels.  Serve with soy sauce, hot mustard, or sweet and sour sauce.

TEMPURA:  You can also mix up a batch of tempura batter and let guests batter their Hot Pot meats and veggies instead and fry them.  When I had my Hot Pot party I set up a soup table and a fry table.  I sat the girls down around the soup (Hot Pot) and the men around the wok.  I intended to have my crowd eat for a while at each table and then switch, but the men liked frying and didn’t want the hot pot, so they ended up frying egg rolls and tempura things and passing to us, and then just had a small bowl of our noodle soup at the end.

TEMPURA SAUCE

½ cup chicken stock

2 Tablespoons soy sauce

2 Tablespoons cream sherry

2 Tablespoons grated daikon (Japanese radish)

2 Tablespoons peeled and grated fresh gingerroot

Combine first three ingredients.  Just before serving, stir in daikon and ginger.

((( Or just use a boxed mix.  That’s easiest! )))

I’m a little late posting this for THIS year, or maybe I’m just waaaay early for next year?  Ha.  But, here are some ways I thought would be nice to celebrate Grandparent’s Day.  But, in all honesty, please don’t save them up for that one special day a year. If you have grandparents living close, do some of these with them as soon and as often as you can.  Time passes so quickly.  Memories fade.  The breath of life evaporates before we know it.  Don’t let it get away from you.  Our elders are a special treasure!

Family Tree

If your family doesn’t already have one, let the kids start a family pedigree chart with their grandparent.  Let them do as much of the investigative work as they can to fill it in.  First let them fill in their name in the center bottom space, and then just above it let them fill in the names of their dad and mom.  Above those spaces are spaces for grandparents on the paternal and maternal sides.  Spend a day or at least an afternoon with grandparents collecting information: names, birthplaces, careers, military, where family died and are buried.  Ask for obituaries, photographs, family Bible notes, newspaper clippings and stories.  It’s actually a lot of fun seeing where your family came from, not just ethnicity, but travels, both foreign and domestic.  It’s also a great way to learn history.  It means so much more and is so much more interesting when you find out you had actual family living in those times and places and events.

This is a Pedigree chart I created as a Christmas gift to my family last year.  I took the digital file of the pedigree chart above to my local print shop (also Staples, Copy Max, Walgreens, and even Walmart can print them) and had it printed on poster-size paper.  I printed mine in color on plain paper, but they can also be printed on photo paper, and then framed in poster size frames.

Video Interview

On one of our visits to my husband’s folks’ house, we were blessed to have his uncle stop by for a visit.  He was in town to speak at a local high school about his experiences as a soldier in WWII (Europe).  He was often asked to speak at schools about his personal experiences, because he was such a gifted story-teller.  He wrote a book as well, which we treasure having a copy of.  We of course were very interested to hear his stories and so asked if he would share some with us, which he happily did.  We all sat around in the living room listening intently as he told of being on the boat and being soooo sea sick and all the other men being soooo very sea sick also, and then being dropped on the battlefield, and of his experiences as a Forward Observer, which was very dangerous.  I could kick myself a thousand times that we didn’t get video of that visit (which is why I make the suggestion to you now).  It is just so moving to hear a personal relative tell of historical events from their own personal experience, and see their facial expressions, and watch their body language.  It is just so much more captivating than a book in history class.  So I encourage you, if you have a grandparent, ask them to tell you a story about some important time in their life and video tape it.

video1Something our family DOES have, and I can tell you is an enormous treasure, is a compilation of my husband’s folks old home movies that they took on an old 8mm recorder.  They had the movies transferred to VHS when that was the most  modern thing, and gave us a copy.  But as hubby and I were watching these silent movies, we realized that much of those people and places were unknown to us.  So the next time his parents visited us we asked them to sit down and watch it with us and tell us where all those places were and who the people are.  I set up a cassette recorder to record their narration.  Many years later I took the old silent VHS and the narration on the cassettes and put them together on DVD.   Then I made several copies and gave them as Christmas gifts for our family.  It was the very next Christmas after grandpa had died and you can’t image what a treasure it was to the whole video3family to get to hear grandpa’s voice again, and laugh at his sense of humor, especially since the family had no idea we’d ever gotten that sound tract.

Also, if  you have been to a funeral recently, most funeral homes ask the family to bring them old photos for a video slide show, set to music, to play during the service.  Why wait until a person dies for this?  Ask your grandparents now if you can borrow their old photographs, and then scan them into digital form and make a slide show of their lives from birth to old age.  You can add captions to the photos that say where the photos were taken and who the people are, and you can also add a favorite song or songs of theirs to go along with it.  Most computers have the software for making photo slide show DVD’s on them.  I used Movie Maker to make DVD’s of our family vacations, weddings, and a memorial of our dad.  It would be a nice trip down memory lane for them to get to see their lives laid out in such a way, and a special thing to share with them while they are living.

Old Letters and Great Books

booksMy husband’s dad served in Korea, and wrote letters home to his parents a couple times a week.  We found the letters a while back, along with a bunch of pictures he took while in boot camp and on the front lines. We also were fortunate to get to inherit his army coat, a hat, and medals, maps, and various other personal objects from the war, along with the flag that was presented to the family at his funeral, and the bullet casings from the 21 gun salute.  Altogether the letters and photos, and photos of the objects made a wonderful book that is and shall forever be a cherished keepsake for generations.

I also collected all our family history, stories, pedigrees, photos, birth, marriage, and death certificates, newspaper clippings, obituaries, maps, military histories and pension papers, pioneer stories, censuses, etc. and made it all into a book (first a ring binder, and then a printed, spiral bound book with a hard cover) to share with my sisters.  I made scrapbook pages of the old photos and scanned those pages, and made separate chapters for each person, telling each person’s individual stories.  I visited courthouses, libraries, and museums in the towns where they lived (the ones that were closeby) and collected as much information as I could about them and the history of those areas (marriage, divorce, land records, court records, if they played on baseball teams, delivered mail, or worked in local factories, or acted, sang, or danced in theatre, etc.).  I visited cemetaries and churches and found headstones and church records.  I visited newspaper offices and got old newspaper stories and obituaries.  I will confess, it is a lot of work, but truly it is fun and rewarding work, and I sooooo encourage you to gather as much of this kind of information as you can from living relatives, while you can.   Honor your parents and your grandparents by preserving their legacy in words and pictures.  They will be delighted and honored to see all your efforts as well.

Grandma’s Recipes

What is your favorite thing that grandma makes?  Why  not make a date to make it with her, and for heaven sakes cookbooksget her recipe!  Get ALL her recipes, and make them into a cookbook.  My husband’s family actually collected recipes from everyone in the family one year and made a family cookbook for all of us.  We all contributed, and we all paid for our own copies of the book, and it is very much a prized possession of mine to this day.  Each person that contributed recipes also told a story to go with it, like if it was the first meal they made for their husband, or if it was their mother’s favorite thing that they made, etc.

I have myself very fond memories of having picnics with my grandmother.  She always made her standard cucumber sandwiches, hard boiled eggs with salt and pepper, and a thermos of iced tea.  When’s the last time you went on a picnic with your grandma?  Or soaked your feet in a tub of hose water in the back yard?  …And listened to her tell stories about a time she got in trouble as a kid.  …Or what it was like as a teenager going to school. …Or her first boyfriend, or first date.  …Or what she and her brothers/sisters did for fun.

Play a Game

My husband has fond memories of playing Yatzee with his grandmother.  It was her gamesfavorite game to play, and if he could beat her he felt like it was a real accomplishment.  Grandma was apparently very good at Yatzee.  My grandma liked to play cards, and her game of choice to play with us kids was Rummy.  She also showed us how to play Solitaire and let us play at the table while she cooked and baked.  I also remember making card houses in the living room, using the carpet to help hold the cards in place.  My sisters and I made elaborate card houses, some more fragile than others.  Does your grandma or grandpa have a favorite game they like to play.  Ask if you can come play it with them one afternoon.  Or, take them to play Bingo, or Pinochle or Bridge at the Senior Center, dominoes, Cribbage, or take them bowling, or to play miniature golf, or darts.  You might find out they’re pretty darn good at it.

Do some gardening (plant an herb garden in pots)

Go to church with them

Visit them and read them letters that they’ve gotten in the mail

Take them to a veterans memorial (if there is one with a spouse or loved one memorialized there)

Take them to a cemetery to put flowers on someone’s grave (for a loved one’s birthday rememberance, or veterans/memorial day)

Take them to a class reunion, or a small town annual get-together

Take them for a drive in the country

Play old records

Watch an old movie

Take them out for lunch

Invite them to your house for coffee (and devotions)

Take them to visit an old friend they haven’t seen in a while

Take them out for ice cream

Sit on a park bench and feed the birds, or the ducks (pond)

Take them for a boat ride (a little row boat across a pond or lake) and bring an umbrella for shade

Take them to a grandchild’s school event, or track meet, or soccer game

Take them to a rodeo, a fair, a car or horse race, or baseball game

Take them to lookout point after dark to look at the city lights

Ask them to teach you how to knit, crochet, sew, quilt, or tie a fly (fishing), etc.

Take them to the shooting range for some target practice

Rent a golf cart and take a drive through a scenic golf course

Take them for a drive to new parts of the city

Take them something you’ve baked or made and visit for an afternoon

Take a pizza and cokes and sit on the porch and eat it with them

Do something for them that is too hard for them to do themselves, but needs done, like vacuum, trim a tree, re-attach a rain gutter, paint, mow, move a hose, shovel a sidewalk, take mail out to the mailbox, light a pilot light, replace a lightbulb, put a heavy dish back up in the cupboard, put laundry away, etc.

Call and check on them at least once a week

Always tell them you love them, as often as you can

Send them cards and letters, with pictures

Pray with them and for them, for their health needs, and other needs

Matthew 20:1-16 (NKJV)

20 “For the kingdom of heaven is like a landowner who went out early in the morning to hire laborers for his vineyard.

My Bible footnote says it would have been 6:00AM.

Now when he had agreed with the laborers for a denarius a day, he sent them into his vineyard. 

My Bible footnote says a denarius (a word of Latin origin) was the standard wage for a full day’s work.  The KJV uses the word “penny” or pence in place of denarius which in Roman currency of the time would have been ten asses (asses were bronze or copper coins used during the Roman Empire).  Denarius is the origin of the common noun for money in Italian denaro, in Portuguese dinheiro and in Spanish dinero.

Here are some example salaries and product costs as of the times of Diocletian in the third century AD:

Farm laborer monthly pay, with meals = 400 asses

Teacher’s monthly pay, per boy = 800 asses

Barber’s service price, per client = 32 asses

1 kg of pork = 380 asses (1 lb = 170 asses)

1 kg of grapes = 32 asses (1 lb = 15 asses)

And he went out about the third hour and saw others standing idle in the marketplace, 

The third hour would be 9:00AM; and there were more people standing inactive, unemployed; (by implication) lazy, useless: – barren, idle, slow“(Strongs #692 argos) in the “agora” (Strongs #58), which is probably the town square, market, or thoroughfare/street.

and said to them, ‘You also go into the vineyard, and whatever is right I will give you.’ So they went. 

Their wage: whatever is right (just drawing attention to that).  The Greek word used is dikaios (1342) and it means “equitable” (in character or act); (by implication) innocent; holy, just, meet, right(-eous).

Again he went out about the sixth and the ninth hour, and did likewise. 

The sixth hour is noon and the ninth hour is 3:00PM.

And about the eleventh hour he went out and found others standing idle,[a]and said to them, ‘Why have you been standing here idle all day?’ 

The 11th hour is 5:00PM (an hour before quitting time), and is it just me or does the land owner seem kind of annoyed that there are folks just standing around idle all day?

They said to him, ‘Because no one hired us.’ He said to them, ‘You also go into the vineyard, and whatever is right you will receive.’[b]

Again he promises “what is right.”

“So when evening had come, the owner of the vineyard said to his steward, ‘Call the laborers and give them their wages, beginning with the last to the first.’ 

To pay them, the landowner worked his way backwards from the new hires to those with seniority (which btw, is an exact representation of the grapes in the basket.  The first grapes gathered are at the bottom and will be last to come out. The first grapes to come out of the basket are the last ones that went in).

And when those came who were hired about the eleventh hour, they each received a denarius. 

Quite a generous wage for an hour’s worth of work.

10 But when the first came, they supposed that they would receive more; and they likewise received each a denarius. 

The landowner was certainly a man of his word wasn’t he, although “fair” is in the eye of the beholder isn’t it?   Ever been hired for a job and completely happy about your wage until you found out what others were being paid?  My husband calls it O.P.M. (other people’s money), and it is the root of all discontentment.  Yep; been there and done that.

11 And when they had received it, they complained against the landowner, 

12 saying, ‘These last men have worked only one hour, and you made them equal to us who have borne the burden and the heat of the day.’ 

13 But he answered one of them and said, ‘Friend, I am doing you no wrong. Did you not agree with me for a denarius?

14 Take what is yours and go your way. I wish to give to this last man the same as to you.

I believe the “wage” in the parable is probably A TICKET TO HEAVEN, and when I look at it like that I kind of get a different perspective. I can’t help but draw a parallel with the thief on the cross.  Jesus told him as they hung on their crosses together, with the sun fading on the day, that today he would be in paradise with Him.  The thief had run out of time to do very many good works.  He was at the 11th hour of his life.  All he had time for was to witness to one last man, yet he got the same reward as our righteous King, as well as all the prophets and saints and godly Hebrews of the Old Testiment who had preached, and prophesied, and judged, and led, been faithful, and died before him.

The thing I have to remember is that Salvation is not earned.  It is a gift rewarded for saying yes to an invitation.

15 Is it not lawful for me to do what I wish with my own things? Or is your eye evil because I am good?’ 

My Bible footnote says that this parable blossomed out of the attitude that the disciples had shown toward service and rewards.

I find this a tricky thing about church. It is so easy when you belong to ANY group of people to look around at others and compare.  So easy to get hurt feelings about things.  So easy to get wrapped up in unholy competitions.

Am I the only one that is secretly longing for pats on the back for my good deeds? Sometimes tempted to brag about charitible things I’ve done just to make myself feel more spiritual or worthy to my peers?  Am I the only one that feels a twinge of jealousy when someone else in the congregation is liked more, fawned over more, appreciated more?  Am I the only one that is hurt when my fruit salad is passed over for Linda’s Fritata?  Or when Beth is chosen to lead next month’s Ladies Group instead of me?  Or when Emily puts a picture on Facebook and it gets 47 likes immediately and I don’t even have 47 friends?  Or when a certain, once unknown blog writer, celebrates her Food Network show and new line of kitchen wares filling up all the isles in all the Wal-mart stores across America and I count it a huge success if just one person clicks the “like” star on one of my posts.

Although rewards are part of God’s plan (Romans 2:6; Matthew 16:27; Revelation 22:12; 2 Corinthians 5:10), Jesus rebukes the spirit of serving for the rewards rather than out of love (1 Corinthians 13).

16 So the last will be first, and the first last. For many are called, but few chosen.”[c]

The last will be first and the first will be last…just like the grapes being gathered into the baskets, the last ones in will be the first ones to enter the winepress, but they will altogether be a lovely batch of vino.

Chosen vs. Called. 

The Greek word for Called is “Kletos.” Strongs #2822.  It means invited, appointed.  It is used eleven times in the New Testament (Bible Study Tools), and most of those times it is in reference to a calling to ministry or a special appointment, such as apostle or saint.

A calling is kind of a general thing, but it is usually geared to a specific group of folks.  For instance, I think of a ranch cook calling the hands for supper.  She yells or rings the bell and anyone on HER ranch who is hungry will come running.  A church bell calls ITS congregation to church.  A school bell calls ITS students to class.  The disciples, and we as Christians, received a calling from Christ to take the love of Christ to our neighbors.  Many are called.

The Greek word for Chosen is “Ekletos.”  Strongs #1588.  It means select, favorite, elect.

Choosing is much more personal.  We choose a mate.  We choose our clothes.  We choose what we want to eat from a menu.  Choosing is intimate.  This word is used 23 times in scripture (Bible Study Tools). Most of those times the word is translated “elect” as in “the elect,” the favorites of the called, the cream of the crop, the most exalted ones of the called.  Jesus called many disciples, but chose a smaller group of twelve apostles.  Of the apostles, Jesus chose an inner circle, Peter, James, and John as His elect.  Often He asked these three to come be with Him for something special, like healing miracles, the transfiguration, or the prayer in the Garden of Gethsemane.

Although the two words, Kletos and Ekletos are spelled the same, they are not pronounced the same and have different meanings.  They are homographs, but I have an uneducated hunch that there is an intended play-on-words in the Greek that is sort of lost in English, don’t you?

The same phrase is repeated in Matthew 22:14.

We all have an inner circle of friends, a small group that we trust just a little bit more, cherish just a little bit more.  I want to live my life in such a way as that the Lord would trust me just a little bit more, and cherish me just a little bit more.  Not to lord it over anyone, but just to have Him smile at me with affection.  I want to have a comfort zone thing with Him.  I want to have the trust/integrity thing with HIM!!!!  I have been forgiven much, I also want to love much (Luke 7:47)!

Personal Application

In penning this post I got to thinking about the shopping trip I made with my granddaughter this past weekend.  It wasn’t going to take us long to pick out some uniform pieces for school: a couple skirts, a couple pants, and a couple pair of shorts, but our little dash in to Old Navy hit a roadblock when we encountered the unbelievable, Disneyland-like lines for the dressing rooms, and then to pay at the end.  It was just crazy how many people were in that store.  I guess that’s what we got for not arriving there until afternoon on the half-price day of the tax-free weekend.

While we were in the monsterous line to pay we passed a bouncy-ball vending machine, and to help pass the time I dug some quarters out of my purse to let my little schnookums try for a pink ball.  One…two…three tries and one…two…three green/blue/yellow balls came out.  Well, shucks.  I asked her what she was gonna do with three balls?  She decided she would give one ball to her sister and keep the other two for herself, but I suggested she give the third ball to another kid in the store.  “Why?” she inquired.  “To be nice,” I riposted, and then I asked her to look around for a kid her age who would be a good candidate.  She looked around, but was overcome with fear and shyness.  She wanted me to do it.  I kept pointing people out to her, and encouraging her, promising that it would make her feel good to do it, but she just couldn’t get up the gumption to talk to someone she didn’t know.  I asked her to choose which ball she wanted to give away, and on our way out of the store I asked a little girl if she’d like to have it.  Although my little jelly-bean was too scared to step out and talk to another person, at least she was willing to give, and I was proud of her for that.

I feel the Holy Spirit challenging me in several ways today through the reading and studying of this parable.  Like my darling granddaughter, I too hold back sometimes, because of timidity.  My anxiousness causes me to stand around idle all day in my comfort zone waiting for a job to come looking for me.  Sometimes I find myself looking around to see if anyone else is stepping out before I do, so I don’t look foolish taking a leap-of-faith all by myself.  Consequently, I don’t make it into the vineyard until the 6th or 9th hour (if at all).  But then there are other times when I feel like I am the one who has been there all day, putting in the biggest effort, and here come others that have done barely anything and are getting lavish praise.  Sometimes I get jealous over favoritism shown to others in the small groups that I belong to.

In all honesty, I don’t accept praise well, but admit it is a nice reward to have someone notice my efforts (so that I can humbly dismiss them – ha, right?).  But to get very little praise or appreciation when others around me seem to be getting tons of praise for what seems like a fraction of the work, that is pretty hard to take.  Stumbling blocks.  Oh Lord, I hate the stumbling blocks in this Pilgrims Progress of life.  They are so hard to get past, but here’s what I’m feeling the Lord leading me to use as tools to help me climb over them, dig under them, and squeeze around them:

pick-axeRemember that He is a man of His word and will reward me with what is right. “And let us not grow weary while doing good, for in due season we shall reap if we do not lose heart.”  Galatians 6:9

shovelStop looking around at the deal everyone else is getting, or get jealous over favoritism.  It’s Satan’s oldest trick to get us to LOOK at things we’re not supposed to have and then looooong for them.  There are far more harder working Christians out there than me who are going to be given the same gift as me in the end, and who have done a mountain more work.  Who cares if I am His favorite or not.  As long as I make it to heaven, who cares if all I have to live in is a pup-tent, and scraps from the Master’s table to eat.  Tis better to be in God’s kingdom than to be anywhere else.

RopeBe motivated by love, and not distracted by greed, or jealousy or even obligation, nor tempted into expecting a reward for every little thing.  To keep my eyes on the vineyard and not on the prize box.  To take the hard shell off my heart and let it swell for that person in front of me who needs a friend, or a sandwich, or a hug, or a kleenex, or a good laugh.

Dear Lord Jesus, help me not to fall into the trap of comparison.  Help me to keep my eyes on You and consider only the prize that You have promised me.  Help me to be content with such things as I have.  Help me not to be idle, or crippled by fear or timidity, or green with envy and miss a great blessing.  In Your precious name I pray.  Amen.

Can you hear the birds chirping?  And smell the wildflowers in bloom?  The pitter-patter of raindrops on the roof?  Ahhhh…SPRING!!!!  Everything old is new again.

How about having all your gal-pals over for a quick, impromptu lunch, easily prepared on a Sunday afternoon, and served on a manic Monday!!!  Do you work outside the home?  Text your closest circle of co-workers on Sunday night and tell them not to bring in lunch for themselves, because you’ve got a little surprise for them.  Then carry in this little luncheon for your super spoiled little crowd.

QUICHE

I used Pioneer Woman’s Cowboy Quiche recipe, from her cookbook, Food From My Frontier (one of my absolute FAVS), I cheated though and used a store-bought deep-dish pie crust, two in fact.  And, I did it myyyyy waaay, with a couple of special touches (to make it a little more girly without being PW’s “Cowgirl Quiche,” because I didn’t have those ingredients on hand).  Here’s how I did mine:

Ingredients

  • 2 whole Unbaked Pie Crusts (from the freezer section, thawed and poked)
  • 1 lb. Bacon, fried until crispy
  • 2 Tablespoons Bacon fat (left over from frying the bacon)
  • 1 whole red Onion, Sliced
  • 8 spears of fresh, raw asparagus (I have it growing in my garden, lucky me)
  • 1 cup of diced smoked sausage (I like the spicy jalapeno variety)
  • 8 whole Large Eggs
  • 1-1/2 cup Heavy Cream Or Half-and-Half
  • Salt And Pepper, to taste
  • 2 cups Grated Colby-Jack Cheese

Let’s Make it…

Fry the bacon until crisp. Chop into little bite-sized pieces and set aside to cool.

Fry the onions in the bacon fat in a large skillet over medium-low heat for about 10 to 15 minutes (until translucent), stirring occasionally. Set aside to cool.

Preheat the oven to 400 degrees. Fix the edges of your pie crusts, if you want them to look a little less store-bought, and then poke them with a fork around the bottom in a few places.  Sprinkle the crumbled bacon, chopped smoked sausage, onion, and raw asparagus around in your pie crusts, of course dividing evenly between the two pies.  Cover both with cheese.

Whip the eggs, cream, salt and pepper in a large bowl, and then pour the mixture into the pie crusts.  Use a fork to pull the contents around a little and make sure the egg mixture seeps down into it all really good.

Place the pies on a rimmed baking sheet, cover lightly with aluminum foil, and bake for about 35 to 40 minutes. Remove the foil and continue baking for 10 to 15 minutes, or until the quiche doesn’t jiggle easily when moved and the crust is golden brown. (The quiche will still seem slightly loose, but will continue to set once remove from the oven.)

Remove from the oven and allow to sit for 10 to 15 minutes. Cut into slices with a sharp knife, and serve!

You might like to top yours with a little dallop of sour cream, maybe a spoonful of pico de gallo, or torn cilantro leaves.  Maybe a drizzle of Shiracha?  Or just naked!

FLATBREAD PIZZAS

I purchased several packages of the flatbreads (and have them in the freezer, because the lady at the deli counter said our store is discontinuing them.  Bummer!!!!  Why do they do that just when I find something that I like???  Husband even liked. Ugh!!!)

Anyway, I took the thawed flatbread and drizzled it with olive oil on both sides, then grilled it for a few minutes on each side on a hot, preheated grill, which gave the bread the nice grill marks and made it really soft on the inside and crunchy on the outside.  I cut each flatbread into thirds and placed on a platter for my guests.

I purchased a tub of Veggie Cream Cheese and a tub of Chive Cream cheese to spread on the warm bread.

And then I had several veggies chopped up for toppings:

Sliced Cherry Tomatoes

Sliced Red Bell Pepper

Sliced Cucumber

Sliced Red Onion

Baby Arugula, Kale, and Spinach mix

Marinated Artichoke Hearts

Olive Salad

Black Olives

Olive Oil

Basalmic Vinegar

I got’ta tell you, these are just darn good pizzas.  Even hubbie liked them, like a LOT!!!!  Even said I knocked dinner out’ta the park, and that I was back on my game.  Which made me blush a little.  And now I really want to impress him more!!!  Fresh, crunchy, delish!!!!

FRUITY LEMONADE

2 or 3 cans of frozen concentrate Lemonade (I like the kind with pulp, pink or regular)

Assorted Fruits:

Lemons

Oranges

Cherries

Watermelon

Strawberries

Blackberries

Limes

Pineapple

Melon

Kiwi

Prepare a large pitcher with lemonade, following package instructions.  Fill large glasses with ice and set out a platter of cut-up fruits.  Let your guests pile whatever fruits they want on top of their ice, and then fill the glasses with lemonade.  When they are done sipping, they’ll have a nice fruit salad to eat!

FLOWERPOT CUPCAKES

I found these adorable, tough, reusable, silicone flower pots online, and once they arrived (and I washed and dried them), I used a boxed muffin mix to fill them, and then a canned frosting to frost them.  Who says cheaters never prosper?  Lol!

I should have purchased the chocolate rocks when I saw them at Amazon too, because there were none to be found in my little town (I’d insert a little sad face here except I don’t have the cute little emoticon stickers on my computer.  I guess I can always paste something from Google…….like this……which actually, surprisingly gives me a tiny bit of satisfaction).

At least we have a Wal-mart, and at least our Wal-mart has a cake isle in the hobbies section with a few choices.

 

And I found Chocolate mushrooms at FIVE BELOW:

And I had an abundance of MINT growing in my garden!!!!  So, I did the Martha Stewart thing!  Which was to poke a sprig of mint into each little cupcake after they were all decorated with the other stuff.

After frosting each cupcake, I sprinkled them with crushed Oreos (I whirled a handful of the cookies in my food processor until they turned into dirt), and tinted coconut flakes.  I really could have done a better job with the tinting!  Made it more green.  I’m a dork!

Just look at these chocolate rocks!  Gosh, they would have just been sooooo cute to put on top of the oreo dirt!  (I’m still sore about it!)

Flowerpot Trifles

flower pot measurementsYou can use real terra cotta pots for the trifles, which come in larger-than-cupcake sizes.  And since the cake is not being baked in the terra cotta you won’t have to worry about dyes or other toxic elements leaching into your batter in the oven.  I soaked my pots in the sink to get the price stickers off, then I put my pots in the dishwasher and ran them through a full sterilizing wash cycle.  When they were done I put them in the oven on warm (170*F) to dry them out completely before using.

You can also decorate your pots all pretty before filling them with the trifle ingredients – just something simple that wouldn’t compete with the cuteness of the cakes themselves. Something like this, I was thinking..

Aaaaand…. if you’re feeling especially ambitious, as I was, you can make some cute little flower pot pens to give as gifts for your gal-pals desks, or home offices.  Or, even better, let your gal-pals make their own… after lunch. OOOO fun…cRaFt PaRtY!!!!!!  🙂

I found all the stuff for mine at Wal-mart (because seriously, that’s all we have), and when I got my little pots home I soaked them in hot sudsy water to help get the price stickers off.  I filled them with aquarium rocks.  Then I took a spring assortment of flower bouquets that I found in the floral section, cut them apart, and used floral tape to attach them to my pens.  I even found colored ink pens (Bic Cristal).
